Happy Birthday Cake Mix Pancakes

My favorite niece, Rachel, is turning 14 on August 25th. . .

. . .technically, she’s my only niece,

but if I had another, she would still be my favorite :-)

 I saw this fun idea for birthday cake-pancakes in the August issue of Everyday with Rachael Ray~ and thought it would be fun to join along with Lynn’s Celebrity Cook-Along with  Rachael Ray~

A fun coincidence since Rachael Ray

also celebrates a birthday on August 25th :-)

 These birthday pancakes are one several cake ideas in honor of Rachael Ray’s birthday month in the August issue, using a boxed mix~

You can add sprinkles to your cake mix batter or use a Pillsbury Funfetti Cake Mix.  I added them to my powdered sugar glaze instead of the batter~

Mix your boxed yellow cake mix according to package directions~ I used a Pillsbury Moist Supreme Yellow Mix.

Ladle the batter into a nonstick skillet or griddle, and cook like you would cook pancakes~ I got 9 pancakes~ approximately 8″~  out of the box mix, but only used 7 for this cake~

Mix powdered sugar with 2 -3 T of water, milk, or orange juice and drizzle over your stack of “pancakes” and add sprinkles~

Rachel~ We blew out your candles and

made a wish that you would come visit us soon!

      The other two pancakes went under a rigorous taste testing to confirm that Pillsbury Moist Supreme Yellow Mix is both moist & supreme :-)

    ♪♫♫ Happy Birthday to Sweet Rachel ♫♫♪…she is a doll & growing up to be a beautiful young lady. Her brothers are pretty cool, too. I must suggest to my DD that she get similar photos of her 3 children in the same pose, year after year. Amazing to see how they’ve grown!

    Now, THAT is about the cutest thing I have seen in quite awhile!!! Rachael is ADORABLE ands it was so neat to see her as she grew!!!!! Great pics!     What a clever idea! I am sure they tasted great too. I tried a Rachael Ray dessert to add to the party and it was awful, not blogworthy at all and such a disappointment. We have a birthday on Aug. 24 and 2 on Aug. 25th. We will have to try this fun idea.

    August is a busy birthday month! My son Jeremy turned 26 on the 9th. He shared that day with my late mom’s late oldest sister Auntie Mary. Nick our youngest turns 18 on August 20th and shares that date with Katie his sassy and smart engineer cousin . August 19th would have been Aunt Ang’s birthday! She shared this day with Katie’s sister Amy! My niece Karla is the 24th and my BFF from my toddler days and still my friend today Lynette is the 22nd! Whew! My late sister Pat and her late hubby Gary celebrated their wedding anniversary on the 18th! My folks were August 29th and Noelle our oldest daughter celebrates 11 years of marriage on the 27th! So I will add Rachel and Rachael to my birthday list today! The pancakes looks so yummy! Thanks for sharing! Anne
