Corn Utopia

My palate and my table are in a state of Corn Utopia this week~ a place where these little kernels are bursting with the sweet flavor of summer.

I borrowed my mother-in-law’s Fitz and Floyd Corn Pitcher, Salt & Pepper Shakers and last but not least, Butter Dish, for summer’s sweetest vegetable~ and the essence of the season~ at its peak of flavor & availability now.

I picked maize-colored placemats with a kernel-like texture at Kohl’s and shucked napkins from the shelves at Beth Bath & Beyond~

Jelly Belly corn kernels and Laffy Taffy banana-flavored butter pats, complete with black sparkling sugar masquerading as pepper!

 A-maize-ing corn facts~

  • The average ear of corn has 800 kernels, arranged in 16 rows.

  • There is one piece of silk for each kernel~ (I had no idea but I can believe it :-)

  • A bushel of corn contains about 27,000 kernels.

  • Each tassel on a corn plant releases as many as 5 million grains of pollen.

  • Corn is an ingredient in more than 3,000 grocery products.

  • One bushel of corn can make 33 pounds of sweetener, 32 pounds of starch, or 2 1/2 gallons of ethanol fuel.

Tomato, Basil Pesto, and Corn Pizza

Ingredients

3 small  tomatoes, sliced

1/4 teaspoon salt

1/8 teaspoon freshly ground pepper

1 (14-oz.) package prebaked Italian pizza crust (like Boboli)

Parchment paper

1/3 cup refrigerated pesto

1/2 cup fresh corn kernels (1 medium-size ear of fresh corn yields about 1⁄2 cup kernels)

1/4 cup grated Parmesan cheese

1 teaspoon sugar

8 ounces fresh mozzarella, sliced

3 tablespoons fresh whole or torn basil leaves

Preparation

1. Preheat oven to 450°. Place tomato slices on paper towels. Sprinkle with salt and pepper; let stand 20 minutes.

2. Place pizza crust on a parchment paper-lined baking sheet; spread with pesto. Stir together corn, Parmesan, and sugar. Top pizza with corn mixture, tomatoes, and mozzarella slices.

3. Bake at 450° for 14 minutes or until cheese is melted and golden. Remove from oven, and top with basil leaves.

    Love your “Ode to Corn.” Who would have thought to make cupcakes look like corn but you. I have never thought to have corn on pizza, but it makes perfect sense to me. I had some of the sweetest corn for dinner last night. Enjoyed this tablescape very much.

    Totally delicious looking…both the food AND the tablescape! What a fantastic photo you captured with the little basil leaf reflected in the pizza cutter!!! Very creative & that dribble of melted cheese had me wishing I could reach through the monitor to pick it off & give it a taste.

    We’ve been enjoying fresh Ohio corn for a few weeks now. Such a treat!!

    Beautiful, Mary! Absolutely beautiful! Your flowers are looking particularly fetching this week!!! The yellow alstoremeria is perfect for this table. I can’t get over those cute cupcakes! Who’d have thunk it…Laffy Taffy “butter pats”!!! I know this may sound “corny”, but that is just the bees knees!!! I love the placemats you chose because of their “kernel-like texture.” You and I used the same water glasses this week!!! :-)

    Many of the corn facts, I did not know.. thanks for sharing those with us. I love corn and will eat it in lieu of ice cream seriously!     Corn is one of my favorite vegetables so I enjoyed this corn themed post very much, Mary! Your Mother-in-law’s Fitz and Floyd serving pieces are so pretty and look perfect as part of your tablescape. I saw these corn cupcakes once before in a magazine and I have to say your rendition looks even more realistic –you have a lot of patience to place all those mini jelly bellies so perfectly!

    The earthquake was certainly nerve rattling! let’s hope the hurricane won’t be the same. Stay safe!

    I love your tablescape! I just spent some time looking back through past post! It is so beautiful and colorful over here! I love your view of the lake! I ‘pinned’ the picnic from June! A FAVORITE!!! I LOVE it! I have some of the items that you do…the quilt, cutlery, pillow…and am going to set this up for my family! I just loved it all! Too bad I don’t have that really cool JEEP!     Mary, Your “corn utopia” post IS a-maize-ing. Love your play on words and all the accents, especially the napkin holders, napkins, placemats and your great yellow glasses. So like you to find placemats that suggest corn kernels. I saw those at Kohl’s and it never crossed my mind to think of corn. LOL That just shows your creativity and eye for detail. LOVE it! Great post!
    Now, I’m starving for fresh corn and that pizza is calling my name.

    A-maize-ing cup cakes!!! The post is a hit, as usual! when I had my kitchen shop in the Miami Lakes area of Dade County, FL I sold a lot of Fitz & Floyd pieces….I love their line and would like to own at least one of everything!

    HI Mary, thanks so much for the sweet b-day wishes!!!!! No flowers but I may have CAKE!!! WE are going to dinner with our best friends for 43 years, AND she and I share a birthday! Both born today, isn’t that something???!!!! So, we always celebrate together! I have spent all day cleaning and preparing for Irene!     I get so excited to come and visit you! Everything you do, I love! And this corny table is no exception. What a great corn dish! I love Fitz & Floyd! Your colors for this table are beautifully organic and suble. BRAVO! Perfect end of summer table.
    The cupcakes are darling little works of art and so is the pizza for that matter.
    Now I know why I just can’t seem to get rid of every silk thread on my corn!

    I got a kick out of all your corn-y accessories. We do the same thing here in my part of Florida when it’s time for strawberries. I never saw so many strawberry-themed items before!

    The cupcakes are so CUTE, especially the little corn skewers at each end. It looks like you had a great time putting all this together and then had the treat of lots of good eats at the end.
