You don’t need any oil for this recipe, since the maple syrup,

pumpkin and applesauce bind the oats together.

Ingredients:

~ 3 1/2 cup oats

~ 2 cups nuts (I used ½ cup each of chopped pecans, walnuts, pumpkin seeds/pepitas, and silvered almonds)

~ 1/2 (15 oz.) can pumpkin puree

~ 1/4 cup maple syrup

~ 1 (3.9 oz) container of unsweetened applesauce (or ½ cup)

~ 3/4 cup brown sugar

~ 1 tsp vanilla

~ 1 Tbsp pumpkin pie spice

~ 1/2 tsp cinnamon

~ 1/4 tsp nutmeg

~ 2 cups dried fruit (raisins or dried cranberries, I used 2 cups cranberries)

Preheat oven to 300 degrees F.

In large bowl combine oats and nuts.

In a small bowl, combine pumpkin, maple syrup, applesauce, vanilla, sugar,

pumpkin pie spice, cinnamon, and nutmeg.

Whisk to combine, breaking up pumpkin.

Add the wet mixture to the dry ingredients and stir to coat.

Line 2 baking sheets with parchment or spray with cooking spray and spread granola mixture evenly onto pans.

Bake granola for 30 – 45 minutes, (45 minutes for me) stirring in 10 to 15 minute intervals

to allow the ingredients to cook evenly.

Remove from oven and cool.

Stir in dried fruit and store in airtight container.

Try to refrain from eating handfuls when it comes out of the oven :)

Serve with plain or vanilla yogurt, drizzled with maple syrup or honey.

The ideal light breakfast that you can serve alone, or with a breakfast bread/ muffin

before or after indulging in your Thanksgiving feast!

Pumpkin Granola

An oil-free granola that celebrates fall and pumpkin spice season! Makes approximately 7 1/2 cups.

Ingredients

    We love granola around here, especially my older daughter who will be here for Thanksgiving. I ca’t think of anything more welcoming than a batch of that for her.

    And I love your table, especially the centerpiece. (YOU can “whip it up” I, on the other hand, would have to dink with it for a while to make it look as lovely as yours. Ha!)

    I just mixed this up and thought it was very mushy and came to recheck the recipe and now have noticed that is is 1/2 can pumpkin (of a 15oz can). I just saw -1/2 (15oz) can pumpkin and misread it. Didn’t pick up on the -1/2 and saw the can in the picture. Anyway, I used the whole can! Who knows how it will turn out. I’ll let you know. :( I love your pictures! :)

    So how much granola does this make? I just bought 12 1/2 gallon mason jars and plan to make it for all my friends for Christmas. Should I multiply the recipe by 12? Also, I read other blogs suggesting 270F for colling. YOur thoughts?

      One recipe will give you 7 1/2 cups of granola if you use 2 cups of nuts and 2 cups of cranberries. You can add more nuts or less fruit. Fill your half gallon jars with cereal or something you can measure 7 1/2 cups of and see how full they are and adjust accordingly. 300 degrees worked fine for me, I made my second batch a week before Thanksgiving. Happy baking & gifting! :)

    I just ohhhed and awed over every picture in this post Mary!! All the lovely colors of ambers punctuated by the ruby colored fruit is so beautiful; along with the many textures and contrasts bathed in sunshine WOW
    Really love how you take the beauty of nature and present in its most natural form. This reminded me of a fabulous seasonal potpourri that not only looks and smells wonderful but you can eat it also!! Love the idea of all the fall flavors of apple, maple, pumpkin,and cinnamon,-oh my!!! It must have been a fun day for you finding those lovely dishes and preparing the perfect recipe. I am so grateful to have found your site a couple years ago-you are my inspiration!!!
