I was looking for a sweet & quick treat to send to my husband’s office for St. Paddy’s Day and found a recipe on Pinterest, here. Inspired the drink concocted with a shot of Irish Cream & Irish Whiskey dropped into a pint of Guinness.
Using my favorite brownie mix in the box, Ghirardelli. Bake according to the box directions, only substituting room temperature Guinness (1/3 cup) for the amount of water (1/4 cup) called for on the box.
The Guinness enhances the chocolate flavor, much like adding coffee to chocolate.
Bake in a mini muffin tin~ at 325 degrees for about 15 minutes.
Mix 1 1/2 cups powdered sugar with 1 tablespoon, each of Irish whiskey (I used Jameson), Bailey’s Irish Cream & water.
Add green food coloring if you like and drizzle mixture over brownies once they’re cooled enough to remove from the muffin tin.
A fun, wee Irish Brownie Bite, not overly boozy, the Bailey’s & whiskey adds just a hint of flavor.
The luck of the Irish was not with me when I baked my first batch of the Dark Chocolate mix of these brownies.
They are foolproof unless you’re interrupted to chase dogs that escape off the porch when the door blows open. . .
Edible but soft, and not firm enough to pop out of the mini muffin tin.
I like the chewy, fudgy brownie parts~ my husband is the edge eater which explains why we’re still married :)
I’m not letting my hubby see this because he would feel very untended to. You may have made my cupcake effort simpler by using the.brownie mix. I have until Saturday to practice.
Oh my gosh, I’m salivating! I can’t imagine tasting anything better. Anything that starts with a brownie gets my vote. Looks delicious and very inviting.
I love Ghirardelli brownie mix..once you use it you can never use another brand again…Your cupcakes are definitely, “the bomb”..will have to save that recipe for the next ladies lunch…Happy St. Patrick’s Day!
LOVE this post! I posted the low calorie version brownie yesterday. At only 188 calories! :D Our brownies are Young’s Double Chocolate Stout cupcakes with Bailey’s Irish Cream cream cheese icing! Yum! I love the little parfaits with the shamrocks. Adorable!

Mary, I’m an edge eater, so your husband would have some competition with me. LOL There is a girl here in Austin who sells brownies. After she cuts them, she packages and markets the edge pieces as Brownie Butts. They are like a crumble that you can put over ice cream or in trifle.
I’m happy to join you for either or perhaps both, even though I shouldn’t. Trying to drop a few pounds. ;-)

You are so stinkin’ talented, Mary! I had heard that Ghirardelli mix was delicious but you took it to new heights. I loved the cute little green icing swirl you put on top of the trifles. I set a new world record, running to JoAnns & the Michaels to buy myself that MS clover cutter. I used a 50% off coupon too. ~~big smile~~ I’ve already tested it on lettuce (not good) & will pick up some baby spinach before Sat.

I hate wasting good booze, but these sound delicious. My daughter is a Jameson fan, so I think I’ll have to make these for her. She will LOVE them. Your photography is beautiful, BTW.
These sound absolutely delicious, and I completely agree that Ghiradelli Double Chocolate brownie mix is the best!! I buy the huge box at Costco that contain several individual sacks of brownie mix.
I am loving those shamrock cupcake liners, too!

I love the edge too and hubby loves the middle fudgy, soft etc etc. LoL* a vice versa version… that’s also the reason why we are still together for 27 yrs now and married 23 yrs on April 3. Funny huh?

Mary, Ghirardelli is the only brand of brownie mix here!! If I’m going to eat all those brownie calories (and believe me I could do the whole box in a day!) then I want the best!! But you have added another layer of yumminess to them with the Baileys! I can’t wait to make these. And they are beautiful too! Your tips on using chicken bullion add so much flavor, Also, made the Bailey’s Irish Cream but used my fave Kahlua in place of the whisky. It is wonderful added to coffee and as a topping for IC.
