Just a fan of the happy colors & packages of the seasonal holiday shapes!

I used to buy them to dole out for my nephews and niece who have outgrown them,

while I apparently have not. :)

I saw a version of this centerpiece in Phyllis Hoffman Celebrate Spring issue using PEEPS® chicks in egg shells.

I added some pastel eggs, egg cups, and paper shred for a few colorful nests and flowers.

Daffodils would have been perfect but ours are spent,

so I used yellow daisies and some white alstroemeria

add a fresh pop of color along with lemons.

~Lemon Peeptinis~

An Easter version of a Lemon Drop, with Bunny and/or Chick Peeps on a wooden skewer,

and a floating organic viola for garnish.

Easter Peeps Hidden Egg Cupcakes

Lemon Peep-tinis

An Easter version of a Lemon Drop Martini with Bunny and/or Chick Peep on a wooden skewer as a festive swizzle stick.
Prep Time5 minutes
Cook Time0 minutes
Course: cocktail
Cuisine: American

Equipment

  • cocktail shaker
  • bamboo skewers

Ingredients

  • 4 oz. vodka
  • 1 oz. triple sec or Cointreau
  • 2 oz. fresh lemon juice
  • 2 oz. simple syrup
  • granulated or colored sugar for rimming glass
  • marmallow Peeps

Instructions

  • Fill a cocktail shaker halfway full with ice. Add the vodka, triple sec, lemon juice, and simple syrup. Seal the shaker and shake vigorously for 30 seconds.
  • Rub lemon wedge around the rims of glasses. Add sugar to a small plate; dip the rims of the glasses in sugar. Divide the vodka mixture between the two glasses.
  • Add a marsmallow chick or bunny Peep to bamboo skewer as a swizzle stick to serve.

Notes

Simple syrup is equal parts sugar and water, heated until the sugar dissolves. When cool, store in an airtight container or jar in fridge until ready to use, up to one month.

    Using peeps in halved egg shells is a brilliant idea. I think I might try doing that with pastel dyed egg shells to give it even more Spring color.
