Pocket Plum Pies

I was gifted with mini plums

from two of my favorite cupcake testers!

Mini plums called for mini pies~

 I picked up a Nordic Ware Pocket Pie Press from Super Target last fall while shopping. . .

 . . . a dangerous place for me to grocery shop :)

I followed the recipe on the back of the

Nordic Ware Pie Press for Pocket Pies~

Instead of using a store-bought pie crust, I decided to indulge and make a cream cheese pastry crust from Kraft~

~quick and easy with a food processor~

I was able to justify the addition of cream cheese since they were small pies :)

Cream Cheese Pastry

~recipe courtesy of Kraft foods

2 cups flour

½ tsp. salt

1 pkg. (8 oz.) Cream Cheese, softened

1 cup (2 sticks) cold butter or margarine

Pulse all ingredients, then divide into two portions.

Wrap tightly in plastic wrap and refrigerate for several hours until firm.

Pocket Pie Ingredients:

1 pkg of refrigerated pie crust, or recipe for a double crust pie

1/3 cup sugar

2 tsp cornstarch

1 cup fresh fruit

1 egg beaten

Additional sugar

Heat oven to 400 degrees F.

Unwrap refrigerated dough or roll homemade dough into 9” circle. Using back of pie press, cut circle out of pastry dough.

 Place dough circle onto top of crimped side of pie press, pressing dough circle down slightly in center.

In small bowl combine fruit with sugar and cornstarch. Spoon 2 tbsp of fruit mixture onto indented portion of pastry circle.

Using a pastry brush, brush edges of pastry circle with beaten egg. With handles of pie press, fold pie in half and squeeze tightly to crimp and seal edges.

Place pocket pies on baking sheet lined with parchment paper. Brush tops with egg mixture and sprinkle with additional sugar. Cut small slits in top of pie to allow steam to escape. Bake 15-20 minutes until golden brown.

Cool & serve.

    Love the sweet note from your cupcake testers :-) I’m sure they would like to be your pie testers too. I have never met a pie, mini pie or pocket pie that I didn’t like. I made mini rhubarb pies just last evening. Have a nice weekend Mary!

    Oh ,my, goodness. I see a mini pie maker in my future! We have 2 plum trees, and the grandgirls helped pick some the last time they were here. They would love these little pies! Your mosaics are stunningly beautiful.

    Omigosh, you had me with the first picture! My mother used to make what we called fried pies and they are among my daughters’ favorite memories of Grandma. I’ve never tried them, but you make them seem very doable, and I like the idea of baking rather than frying them. Now I just have to fine one of those very cute pie presses!

    My daughter and I are going to Target tonight so I am going to look for a mini pie maker! I ADORE pie, much better than cake, so have to try this. The fact that they are tiny is great!!!! As always your presentation and pics are superb. Loved the note:):) XO, Pinky

    I have one of those little gadgets…I’ve used it to make mini empanadas filled with picadillo and have used it for potstickers…Will need to add mini fruit pies to the repertoire…The photos are so yummy…!

    Oh yum! One of my favorite things, gifted fruit! Gotta tell you I turned down a different street during my walk this morning and a tree was dropping something that got squishy… For a brief second I wondered if they were some sort of plum, might look into that out a little further tomorrow:@)

    It all begins with the wonderful little note from Olivia and Amelia. How very sweet! These pies look delicious and they look like they might be fun to make. I love plums so I might just have to give these a try. I see a trip to Target in my future(tomorrow)so I will keep an eye out for a mini pie press.

    A high school buddy of mine with whom I recently reconnected via Facebook gave me a Nordic pocket pie maker. I still haven’t made any pies, but seeing this inspires me to get to rattlin’ some pots and pans down there in the kitchen! That’s a great way to have pie without having to make a whole one that – these days, anyway – will go to waste around here. We don’t eat as many sweet desserts as we used to, so smaller portions like this just makes sense! I’m going to give it a whirl!

    I have the same little tool to make dumplings, only around here we call them EMPANADAS! They’re filled with cheeses, with fruit like yours, with chicken and meat and I often use the pocket pie maker. Loving your recipe though, I will make this recipe soon…they look so yummy!!

    Mary, I don’t know what’s cuter, the little pie maker or the note from your two tasters!!! I think I need one now! It looks easy to use, and the pie crust is a good way to get your daily requirement of cream cheese! Yum! My daughter can only eat pitted fruits that are cooked and she would love this.     Oh, I’m going to have to try your crust recipe! I bought one of those cute little pie doohickies too and loved using it. However I hated how much of the store bought pie crust went to waste using this – so homemade sounds fab! So glad I found your blog via Pinterest!

    Made these last night and they were so delicious! I increased the fruit to 1 1/2 cups and used about 1/4 cup of filling per pie. I’ve got a giant box of plums so I’m sure I’ll be making more of these! Thanks!
