Ingredients

2 cups chopped fresh blueberries 

1 cup whole fresh blueberries 

1 tablespoon white balsamic vinegar

1 tablespoon honey

1/4 cup fresh lime juice 

3 tablespoons chopped fresh cilantro

2 seeded and minced jalapeño peppers

1/3 cup diced red bell pepper 

1/4 cup chopped red onion 

1/2 teaspoon kosher salt

Preparation

Coarsely chop 2 cups fresh blueberries.

Stir together with whole blueberries and add rest of ingredients.

Cover and chill until ready to serve.

For best flavor, enjoy within 2 hours when the flavors have married but are still distinct.

Ingredients

  • 2 cups chopped fresh blueberries
  • 1 cup whole fresh blueberries
  • 1 tablespoon white balsamic vinegar

    Hi Mary, I’m so happy to be the winner of your basket giveaway! I have been thinking of many places to go where I can use it–canoeing nearby, the beach, and up to the mountains where we go in August! I can’t wait to see it. I’m planning my post now! Thank you so much!
    Oh, I almost forgot to mention in all the excitement, this blueberry salsa recipe sounds yummy and unusual. I’ll take mine without the onions, as I am very allergic to them. I always make two versions of things like this–putting some aside for me and then adding the onions to the remainder for my family and guests. I think the lime juice must be better with the cilantro and peppers, too.

    I don’t think I’ve ever heard of blueberry salsa but I”m willing to give it a try. I just made mango salsa the other night and had it with fish, but never hear of blueberry. Love how patriotic is!
