Celebrate the red, white and blueberry with an easy appetizer that’s flavorful, comes together quickly and is healthy too!
How about an easy appetizer to celebrate the Red, White and Blueberry for the 4th of July?
It’s fresh and flavorful, comes together in 10 minutes and and can be served with Red, White, and Blue Tortilla Chips for a little patriotic snacking.
This recipe is easily adapted, changing the quantity for your crowd! Add some strawberries to your blueberry medley if desired. You can see another version: Cinco de Mayo Dos Berry Salsa.
Exercise your freedom and independence by adjusting the amount of jalapeño in this recipe, to reduce or increase the fireworks in your mouth :) depending on how hot you like your salsa!
Ingredients
2 cups chopped fresh blueberries
1 cup whole fresh blueberries
1 tablespoon white balsamic vinegar
1 tablespoon honey
1/4 cup fresh lime juice
3 tablespoons chopped fresh cilantro
2 seeded and minced jalapeño peppers
1/3 cup diced red bell pepper
1/4 cup chopped red onion
1/2 teaspoon kosher salt
Preparation
Coarsely chop 2 cups fresh blueberries.
Stir together with whole blueberries and add rest of ingredients.
Cover and chill until ready to serve.
For best flavor, enjoy within 2 hours when the flavors have married but are still distinct.

Ingredients

Oh, I almost forgot to mention in all the excitement, this blueberry salsa recipe sounds yummy and unusual. I’ll take mine without the onions, as I am very allergic to them. I always make two versions of things like this–putting some aside for me and then adding the onions to the remainder for my family and guests. I think the lime juice must be better with the cilantro and peppers, too.

I don’t think I’ve ever tasted anything made with blueberries that wasn’t delicious! This salsa can’t go wrong! Will definitely give it a try. This was one of my favorite giveaways and I am so happy for Linda!

I don’t think I’ve ever heard of blueberry salsa but I”m willing to give it a try. I just made mango salsa the other night and had it with fish, but never hear of blueberry. Love how patriotic is!
