company on their way for Easter!

Using Duncan Hines Decadent Carrot Cake Mix

and believe it or not. . .

a can of Diet Ginger Ale!

Along with some ready-made

Cream Cheese Frosting~

I saw Hungry Girl’s tip on Food Network

for making Diet Soda Cake

using an 18.25-oz. box moist-style cake mix

and substituting the oil and eggs

with a 12-oz. can diet soda!

This was not a moist-style mix, but I already had it so I thought I would experiment and try it with cupcakes~

Carrot Cake Cupcakes, adding Diet Ginger Ale!

These cupcakes were moist, delicious, and oh so quick & easy~

perfect if you’re in a hurry and need a sweet treat

to take or serve!

I followed the box directions for mixing the package of carrots and raisins included in the Duncan Hines cake mix, with hot tap water and letting stand 5 minutes.

Drain the excess water, mix with the dry ingredients and add your diet soda. You could use diet lemon-lime or club soda~ I thought diet ginger ale would  complement the carrot cake flavor.

Bake 20 – 25 minutes at 350 degrees, following the guidelines for baking cupcakes on the back of the box mix.

Hungry Girl’s flavor suggestions include yellow cake mix + diet cream soda, lemon cake mix + diet lemon-lime soda, and devil’s food cake mix + diet cherry cola.

I sprinkled some chopped pecans on

top of the cream cheese frosting.

about ready-made frosting,

whip up some Maple Cream Cheese Frosting

for these cupcakes.

    Oh my gosh, I love these! They sound delicious and so easy! Love what you can do with box cake mixes! But of course your table settings are georgous….love the tablecloth background and the nanny plate! You must be totally organized and have a lot of storage area..lol

    Sounds so easy especially if you have no eggs. Question: why diet soda? can you use regular soda? Happy Easter!

      Hungry Girl is about ingredient swaps and cutting calories. You could bake the cupcakes with the oil & eggs like the box directions. I’m afraid regular soda would be too sweet with the added sugar.

      It’s not a tablecloth, it’s a kitchen towel from Williams-Sonoma a couple of years ago :)

    I just made a carrot cake with that same mix! I added lots of fattening ingredients though, offset [ha ha] by some freshly grated carrots. I was pleased with the result though, and it was soooo easy. It’s posting Wednesday. I will have to try the diet gingerale next time, what a great tip! Your cupcakes are adorable and maple cream cheese frosting, yum!

    Well, I will definitely have to give these a try! But I’m like you, I’d have to whip up some of my own frosting! Too bad the tea towel is not a tablecloth because you could have sold a bunch of them!

    Ginger ale is so interesting. I’ve also heard of a pound cake recipe using it that was thought by my friend to be delicious. Adding the chopped pecans sprinkled on adds interest and sounds yummy. Your serving plate with the cup cakes is very cute and I like the way you elevated the center one. Makes it interesting.

    I saw this recipe and was very excited to try it but mine didn’t turn out. I followed the directions on the box, along with yours, drain the excess water and added a can of diet ginger ale. I should have known something was wrong when the batter was very runny and not thick at all. My cupcakes didn’t rise and tasted horrible. Very disappointed as this box of cake mix wasn’t cheap and had to throw it all out. =(

      Hi Shana, I’m sorry they didn’t turn out for you, that’s a mystery to me. Did you hydrate your carrot mix in hot water for 5 minutes? My batter wasn’t runny and the carrot mixture makes it thick…?

    Just made the cupcakes hoping for tomorrow’s dessert. I had the same results as Shana did…batter too thin and cakes did not rise well. I am wondering if I should not have used electric mixer. Did you mix in your soda by hand?

      Yes, by hand, 50 strokes the carrot/raisin mix and ginger ale together with the dry ingredients. Sorry they didn’t work :( I’m completely puzzled… I’m going to make another batch next week.

    I might give this a try.Your cupcakes are so cute. I love the egg cup idea.

    I made the angel food pineapple cake, that’s been on FB and Pinterest, for Easter. It is just a box of angel food cake mix and a can of crushed pineapple. Mix the pineapple with the dry cake mix and bake according to box directions. I served it with fresh strawberries and whipped cream. So easy and delicious.

    Went back to this post because I want to make these cupcakes in April. Long ago, I made the chocolate cake + diet coke & it turned out great. Your post reminded me about this recipe. LOVE your soft green w/rabbits tablecloth. Please tell me it’s new & available somewhere. Thank you.
