Cinco De Mayo Mini Taco Dips

Cinco de Mayo is a week away and no

celebration is complete without

some chips & salsa or guacamole!

These mini layered taco dips are quick & easy to assemble~ an individual or party serving version of Seven Layer Fiesta Dip from McCormick.

My set of mini dessert glasses from Bed, Bath & Beyond were ideal to serve these layered dips for our friend Carolyn’s In the Pink party last summer, but you can just as easily use plastic cups for easy clean up for a crowd.

Layers are easily assembled~ refried beans, a package of taco seasoning, guacamole, sour cream, salsa, and cheddar cheese, topped with black olives and green onions. I used salsa instead of  tomatoes and mixed the taco seasoning with the refried beans instead of the sour cream but you adjust the layers to your liking.

These mini glasses are just shy of 3 ounces so they’re portion control bites but any small cups would work.

And no Cinco de Mayo celebration is complete

without a cerveza or margarita!

I used Blue Crab Bay Jalapeño-Infused Margarita Mixer,

a lime-based mixer that spices things up~

with hints of jalapeño. . .

    The tiny martinis are so cute with the dip! I love all the little tasting party accessories, so much fun! Anything Mexican and I’m in! I am especially interested in that frosty margarita, it sure would taste great later this afternoon!

    i am just kicking myself… i had these glasses in my cart the last time i was at homegood and thought oh come on, do you really need these? i had found something more expensive so i have to rationalize the smaller items away to feel good about my larger purchases… dang this is beyond adorable! i was going to do deserts, which i need like a hole in the head, so to see veggies put to a good use, dang i am jealous! this is beyond adorable, just a wildly creative way to serve up the fun, gracias amiga!

    and make that a dos gracias, i am so loving my treats too, thanks again for brightening my days by the sea~

    Si, si, si! As a Rodriguez, I give to you my official stamp of approval!!! This is really, really cool, Mary. These would be perfect on a buffet! I’ve been to many parties (our own included) where the 7-layer dip is just in a single large container from which everyone can dip. Both Ramon & I are a teensy bit leery of germs being passed through buffets, so doing it this way would be a lot less worrisome. Beautiful AND healthier! :-)

    I could make this work with the little micro martini glasses I bought a couple of weeks ago, however, it will have to be after Cinco de Mayo because I won’t be here then. Margarita sounds good about now.

    I did not know they made jalapeño infused Margarita mix…how yum!!..and I love the taco dip in those dessert glasses..it gives me an idea for a salad accompaniment…hmmm!…What a beautiful presentation Mary!…Happy Cinco de Mayo!

    OMGoodness, Mary, I just did this same thing for our progressive dinner! My presentation was not as beautiful as yours however!!! My son used to have one of those large Martini glasses, I’ll have to see if he still has it and borrow it. XO, Pinky

    I wonder where my comment wenrt/???? I left one this morning and was rushed so came back to look again. I said that I did the SAME THING this weekend for our neighborhood progressive dinner. I used plastic cups so thatI could just throw them away and go onto the next house! They were a hit and I also made cucumber sandwiches and a delicious shrimp in a warm slaw. Have a beautiful week.
