Goat Cheese-Melon Bites combine the sweetness of summer from the watermelon with soft, tangy goat cheese~ perfect partners for a make-ahead, no-bake bite!
Ingredients
1 small watermelon
1 (4-oz.) goat cheese log, softened
2 tablespoons chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
Garnishes: fresh basil and freshly ground pepper
Cut watermelon into 1-inch-thick slices.
Cut slices into rounds, using a 2-inch cutter, mine was scalloped but you can use round or any shape you want.
Scoop just enough melon from tops to
form indentations, using a melon baller.
Stir together goat cheese, 2 Tbsp. chopped fresh basil, salt, and 1/4 tsp. freshly ground pepper.
Spoon into indentations.
Chill 1 to 2 hours. Garnish, if desired.

I’ve made watermelon & goat cheese salad before. Not many would think of marrying the two together, but somehow that combination just works! But my salad was no where near as pretty as yours. So creative! I’m bookmarking this one, like I’ve bookmarked many of your posts!
I love these Mary!! How refreshing and simple! I just might have to make a tray of these for the upcoming fiesta! Wouldn’t they be a great little refresher with spicier heavy foods~they look so cute the way you cut the melon! I went to get the witch boots candle holders because I loved the cookie legs you did with them last year. I found the candle holders and more- in fact I bought the gingham napkins you show here also! Beautiful! I’ve tried melon slices with feta but never goat cheese. What a nice combination that makes. I’m looking forward to trying that.
