Goat Cheese-Melon Party Bites

Watermelon Goat Cheese Bites

I’ve been looking for party recipes lately.

Goat Cheese-Melon Bites combine the sweetness of summer  from the watermelon with soft, tangy goat cheese~ perfect partners for a make-ahead, no-bake bite!

Ingredients

1 small watermelon

1 (4-oz.) goat cheese log, softened

2 tablespoons chopped fresh basil

1/2 teaspoon salt

1/4 teaspoon freshly ground pepper

Garnishes: fresh basil and freshly ground pepper

Cut watermelon into 1-inch-thick slices.

Cut slices into rounds, using a 2-inch cutter, mine was scalloped but you can use round or any shape you want.

I hope Southern Living knows what justice you do to recipes you find in the magazine! Your presentations are equal.

These melon bites look divine and would be so pretty on a party table! Now I know what to do with all those cookie cutters I’ve been hoarding!

These are SO pretty, Mary! The scalloped cookie cutter and the white, basket-weave plate make for a really nice presentation. I agree with Lulu; I hope Southern Living is showing you some appreciation, my friend. :) Thank you for sharing and have a good day, Mary!

    Hugs,

I’ve made watermelon & goat cheese salad before. Not many would think of marrying the two together, but somehow that combination just works! But my salad was no where near as pretty as yours. So creative! I’m bookmarking this one, like I’ve bookmarked many of your posts!

I love these Mary!! How refreshing and simple! I just might have to make a tray of these for the upcoming fiesta! Wouldn’t they be a great little refresher with spicier heavy foods~they look so cute the way you cut the melon! Thank you so much, I was looking for something extra easy and creative to add to the menu for some sparkle and you have made my day!

I’ve just discovered your blog in the past two or so weeks. I love your style and visited Pier 1 on Friday after not having gone there much in the past. I went to get the witch boots candle holders because I loved the cookie legs you did with them last year. I found the candle holders and more- in fact I bought the gingham napkins you show here also! I love that you list your items and where to get them at the end. Thanks so much.

Aren’t they PRETTY!! Perfect little bites of lusciousness…just a mouthful.
I guess I’ll stop posting the big bowls of mixed fruit that I used to be so proud of making. LOL This beats them, hands down!
I wonder how they would taste made with cantelope? When I saw the title in my email, that was what I first thought of, before I saw the photos. Hmmm?

One of my favorite summer combinations is watermelon, strawberry, goat cheese and spinach salad…but your beautiful little watermelon goat cheese bites takes it to a whole new level! Gorgeous and delicious!

Beautiful! I’ve tried melon slices with feta but never goat cheese. What a nice combination that makes. I’m looking forward to trying that.
