Kiss Me I’m Irish Cookies

are a quick and easy treat

for St. Patrick’s Day!

Ready in about an hour

and you can celebrate

St. Patrick’s Day with a kiss!

Kiss Me I'm Irish Cookies

‘Kiss Me, I’m Irish’ Cookies

Makes aproximately 30 cookies

Ingredients

½ cup (1 stick) butter, softened

½ cup sugar

½ cup light brown sugar

1 egg

1 teaspoon vanilla extract

¼ cup Irish cream liqueur (like Bailey’s) or make your own easy blender Irish Cream here.

2 ¼ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

Hershey’s® Kisses® milk chocolates, unwrapped

Colored sugar if desired

Directions

Preheat the oven to 350°F. Line 2 cookie sheets with parchment paper.

In medium bowl, beat butter and sugars with electric mixer on high speed until light and fluffy. Add egg and vanilla, beating until incorporated, then add Irish Cream, beating until well combined.

In another medium bowl, combine the flour, baking soda and salt. Add to butter mixture, a little at a time, beating on low speed until combined.

Shape dough into 1-inch balls and roll into colored sugar if desired. Place on the prepared baking sheets. Bake for 8 to 9 minutes or until lightly golden. Immediately press kiss into center of each cookie; cookie will crack around edges. Cool on cookie sheet a few minutes then move to wire rack to cool completely.

    These look wonderful and I bet they would be good with the Andes Creme de Menthe chocolates in the middle-just wouldn’t look as pretty since they are rectangular. Love the cupcake liners. Great job as always!

    Forgot, to say how clever to use the muffin liner as a decorative topper. You have started a new trend. I love the idea. At first, I thought you had hand painted the lid. Of course, I would not be surprised it you had. This idea could be used at Christmas with the green jars too.

    Everything looks so pretty and fresh and the cookies . . . well, I’m just going to have to make some this afternoon! BTW, I’d love to know where you found the green Ball jars. I’ve looked and looked and all I’ve found are blue Ball jars in pint size – at Kroger. They are a gorgeous shade of blue but I want the green. Can you help me please?

      Hi Vicky, I’m sure the green jars will be flooding the stores soon! I found some at Target and Michaels last year. You can buy them from Ball online in pint and quart size here.

    I too thought you painted the lid! But how clever to use a liner, you sooo smart :) The cookies (peanutbutter blossoms) are my hubbys favorite so to roll them in green sugar, wow perfect for St Pattys Day!

    How clever to put the cookies in your signature inside outside cupcake papers! Really makes the cookie a star! I bet they taste stellar too! I must get some green jars to play with, congrats to the winners! Love the name of your cookies :)
