I’m Weighing Anchor and Sailing into
Memorial Day Weekend
with Red Velvet Cupcake Sailboats
for a sweet & patriotic bite!
Memorial Day kicks off
boating season at the lake and
is the unofficial start of summer!
So it seemed only fitting to hoist paper sails for a regatta of red, white and blue cupcakes! Sails are scrapbook paper squares, folded into triangles, and bamboo knot picks make a handy mast.
I’m a fan of doctored cake mixes, so I used a Duncan Hines Red Velvet mix for the cupcakes, substituting buttermilk for the water, 4 eggs instead of 3, and the same amount of oil called for in the mix.
Follow the directions on the box and fill paper-lined muffin cups two-thirds full. I use an ice cream scoop for easy filling. Bake cupcakes according to the directions on the box, 16 – 19 minutes until they test done with a toothpick inserted in the center. You can find a 5-star rated cream cheese frosting here, or if you don’t object to frosting in a can, I like the convenience and taste of Pillsbury Creamy Supreme Cream Cheese Frosting.

I want to go boating with you! I used to have fun planning special picnic meals during our days of sailing, but they never looked as cute and delicious as these. Makes me want to get back into boating, except our lakes are drying up here in Texas. ;-)
Hi Mary, I love those enamel boat dishes! Looking back over your delicious posts and scenes of your beautiful lake was a great way to start my holiday weekend! Off to our son’s college graduation and then a little vacation…and then I will try your lemon basil shrimp salad when we return! Enjoy your weekend! Linda

God bless America! (And talented girls!) I’ll be certain to call all those military family members, old and new and give them THANKS! Yankee Doodle to ya…….
I have just got to stop and take a few minutes to thank you and tell you how much I love and look forward to your posts. You put so much effort forth and take so much time with your camera to get things just right. I for one truely applaud and thank you. ~m
Beautiful, Mary! Love the sails, and well , everything!
God bless those who have died for us, and comfort the loved ones who mourn for them.
Hi Mary You are so creative with decor and food. I wonder who gets to eat this cupcakes? If you need someone to help eat them,I would be glad to help:)
Thanks Rhondi, I’ll remember that next time :) The cupcakes sailed over to my husband’s office.
can you see i am standing up singing and saluting? its all so fun and festive, if only the ca coast looked as inviting as your color filled post! the fog has moved in with heavy wet raindrops soaking the sky and soil, it could be xmas, not the red white and blue merry making feel for us!
i am off to seek out a bit of garden solace, i am so far behind i fear i will be more ready for desert week ;-)
happy holiday to you!
Just too clever. I love it all.
I should not be hungry when I read your posts. I could gobble up a cupcake in two bites. So cute too.

Thanks Amy, The plates are Food Network Cafe Red & Blue Dinnerware, from Kohl’s several years ago :)
Absolutely LOVE these! We bought some nautical stuff at IKEA for a nautical theme 4th. These are making an appearance as well as your Cobb Salad boats. What amazing ideas you have.

Wow, these are awesome sail boat creations!
Yum! That enhanced recipe sounds yummy! Love the little regatta sails and the way you added the extra cupcake paper on the outside. It’s still a bit cool up here but hopefully we can be outdoors and enjoy some dining on the deck. Have a wonderful weekend and enjoy some boating!
Love the way you present everything, I love table settings and craft as well. Monika from HMC
