Pigskin Playoffs and Potato Skins!

Are you looking for some pigskin playoff food or gearing up for the Super Bowl? I’m always looking for an excuse to celebrate anything with a potato and Food Network Magazine (FNM) came up with 32 potato skins toppings to match each NFL team which makes watching football a little more palatable for me!

We noshed on potato skins loaded up with toppings for the teams for some of last weekend’s playoff games.

I cut each potato in 4 football-appropriate quarters :) instead of the traditional half and for multiple potato skin sampling.

Brush your potatoes, skins and cut sides, with olive oil and season with salt and pepper, then bake at 400 degrees for 30 – 40 minutes until done. Scoop out your pulp leaving 1/4 of inch of potato and skin and set aside pulp for another use. Brush more olive oil or melted butter on the inside of your potato quarter and sprinkle with some shredded cheese of your choice and return to the oven for about 5 minutes or until the cheese is melted and for a cheesy skin layer and base for your toppings.

 Dallas Cowboys: Texas Chili Potato Skins, chili, grated cheddar chopped onion, (I used chives instead) sour cream and hot sauce.

 And I highly recommend New England Patriots Maple Bacon Potato Skins, with the unlikely match up of apple butter and maple bacon on cheesy skins.

Instead of following FNM’s play on Carolina Panthers Country Ham Potato Skins with ham salad, chopped parsley and minced pickles on cheesy skins, I called an audible and we topped our Panther potato skins with pulled pork, a drizzle of barbecue sauce and jalapenos. . .which might explain the Panther’s loss to the Seattle Seahawks. . .

 Seattle Seahawks Pacific Salmon Potato Skins are topped with flaked grilled salmon. We added some sour cream and a little dill and chives instead of the FNM’s addition of wild mushrooms.

While the Seahawks defeated the Panthers in the playoffs, the Panther potato skins were the fan favorite and declared the winner!

    Good Morning, Mary! Love these ideas but am missing my Packer’s??!! Can’t imagine it would be anything but slathered in Cheese and Dairy sour Cream though, lol!!! Have to head to your link to see.

    Cute idea Mary. Sadly,my team, the Steelers was eliminated. I have to tell you I made the turkey sausage soup recipe you posted and it was delicious and hubby loved it. I used spinach instead of kale, as I don’t care for kale and it was great.
    Sorry about the Panthers I was rooting for them.

    Outstanding Noshing Mary! Love that you cut them in quarters, they all look so good! I am sorry your Panthers lost but you created a winner with the BBQ jalapeno potato boat! Lovin the sour cream laces and pennants! We don’t really have a pro team favorite, but we are big fans of football food, so these will be going on the menu for the next occasion!

    How cleverly tasty!
    Although I am not a fan of football, I love the idea of the potato skins for a ‘skin party’….and wedges are perfect for multiple tastings!

    Now how fun was that?!! What cute ideas!!! I could care less who is in the playoffs/Super Bowl but I DO care which one of these I’m going to make first. Wanna bet it will NOT be the one with the jalapenos??? LOL I bet everyone knows I’m a whimp when it comes to hot stuff.

    Hey, Mary!! LOVE the Panthers and love their potato skins, too!! cam was our QB at Auburn, so most Auburn fans are now Panthers fans, too. Sorry they’re out of it, though. Thanks for all the great potato skins recipes!! YUM!

    Oh my gosh…you have the greatest ideas for appetizers when it comes to events…I so love potato skins and the different ones you came up with for each team is genius…and also love that you make the skins smaller in size…I love that as it is so much easier to eat!….

    Guess we’ll go with the Seahawks …. My husband is an NC State grad and holds nothing against Russell Wilson for transferring to Wisconsin.
