I have a last-minute Easter treat for small and big kids alike, PEEPS® Hidden Egg Cupcakes!
I found heaps of PEEPS® for Easter at Target.
This fun idea for a hidden egg or ‘surprise-inside’ your cupcake comes from Betty Crocker.
Bake your cupcakes using your favorite recipe or according to the box directions.
When cupcakes are cool, use a melon baller to scoop out center of each cupcake, about 1-inch deep. Hide your candy egg and add additional sprinkles if desired in the cupcake hole.
I put the top back on the cupcake to cover the egg and pressed it back in place to fit. It doesn’t have to be neat since your frosting will cover the top, but I wanted my egg to seem like it was hidden down in the cupcake rather than in the frosting, but you can skip this step if you’re in a hurry.
Use your favorite frosting recipe or canned frosting, tinting your frosting with food coloring for a fun Easter egg or grass color. I used a cream cheese frosting and topped the cupcakes with tinted coconut I had left over from Mini Easter Basket Cakes.
Tinting shredded coconut is quick and easy! The first way is by placing your coconut in a plastic bag or bowl, adding a couple of drops food color, and mixing or massaging your plastic bag until you have your desired color. Let your coconut dry a little on wax paper and place it in a baggie in the fridge until ready to use. Remember your color mixing from elementary school, red + blue = purple and yellow + red will make a carrot color :)
I tinted my coconut by adding a couple of teaspoons of water in a jar, then adding a couple of drops of food coloring, giving the jar a shake to mix the color with the water for a more even mix of color. I added the coconut to the jar and shook it again until it the coconut was tinted. Since I added some water, I placed the coconut on a paper towel to absorb the excess moisture.
Top your cupcakes with PEEPS®. I used some limited edition Orange, Lemon, and Lime Delight Chicks that come in a 3-pack but there are heaps of PEEPS® to choose from and ways to enjoy them!
