Help yourself to Blueberry-Almond French Toast, made a little healthier so you can indulge, guilt-free, for breakfast or brunch!

This French toast comes together in under 10 minutes. Refrigerate it overnight and then pull it out to bake it in the morning, perfect for company or a lazy weekend morning!

It’s made healthier with a combination of whole eggs and egg whites and a whole-wheat baguette for some crusty texture and additional fiber and protein from whole grains.

It’s topped with a sprinkling of blueberries and almonds for some nutrition, flavor and crunch.

Serve it with a side of flowers . . .

I used unsweetened vanilla almond milk for a dairy-free alternative for this recipe and some additional vanilla flavor, but feel free to use skim milk or 1% lowfat milk, with a little more body but still lower in fat and cholesterol.

Guilt-Free Blueberry Almond French Toast, recipe adapted from Ellie Krieger

Yield: *8 servings
Level: Easy

*I made half a recipe and baked in an 8 x 8 pan.

Ingredients

1 whole-wheat baguette (about 18 inches long, 8 ounces), cut into 1-inch cubes

8 large eggs

8 large egg whites

2 cups unsweetened vanilla almond milk (substitute skim or 1 percent lowfat milk)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/3 cup pure maple syrup

2 cups blueberries (fresh or frozen)

1/2 cup sliced almonds

2 tablespoons brown sugar

Directions

Spray a 9 by 13-inch baking pan with nonstick spray. Arrange the bread in a single layer in the baking pan. Whisk together the eggs, egg whites, milk, vanilla, cinnamon and maple syrup. Pour the egg mixture over the bread in the pan so the liquid saturates the bread.

Scatter the blueberries evenly on top and sprinkle with the almonds and brown sugar. Cover and refrigerate overnight.

The next morning, preheat the oven to 350 degrees F. Bake uncovered for 45 to 55 minutes.

Serve with a dusting of powdered sugar and syrup if desired.

    When I was working I made something very similar . Everyone looked forward to it. I will try my next batch with the almond milk. It is a company brunch pleaser! Yum!😋 have a great day !

    Oh yum Mary! Using almond milk is quite brilliant! This is going to be great to make for Memorial Day to feed the masses, and I don’t see why I couldn’t add some strawberries too? Love the easy peasiness of it and that it’s not too sinful! Thanks :)

    Oh my, Mary, the blueberry French toast looks fabulous, and to be guilt-free…even better!! I’d be making a half recipe, too, unless I was having a crowd. I swoon every time I see your mismatched flatware. It’s such a beautiful collection.

    Mary, Almonds, blueberries and maple syrup sound delicious! The french toast looks yummy but I am also in love with your flatware photo and those peonies!! They are gorgeous!!     The recipe sounds delicious. I do have one suggestion for the you all. – please use organic bread made with non G M O wheat. The wheat treated by Monsanto to make it more resistant to damage is very dangerous. If you can find a decent natural food source, please use it.

      Hi Paula, Yes the full recipe serves 8, so each serving is 1 egg and 1 egg white. I made half a recipe and used 4 eggs and 4 whites :)

    Hi Mary,
    Oh how I love your posts!!!! I enjoy making french toast for breakfast, but quite time consuming and difficult for more people to eat at one time. This is wonderful for ease of prep without the last minute hassle. Waking up and just sliding the premade dish into the oven is a recipe I am grateful for.

    The almonds, blueberries, maple syrup and brown sugar atop french toast is a wonderful combination; can’t wait to try this.

    You do such a fine job streamlining recipes with such great taste and style.

    I made the berry cake with the lemon curd I wrote to you about. Can you believe I had never tasted lemon curd? Now, I am making up for lost time :-)). (It would probably be good with orange juice also)?? thanks again, spending more time in the kitchen and enjoying it!!

    My husband and I are visiting family in California from North Carolina. I traditionally have prepared stuffed French toast from Southern Living for them each Christmas Morning. Last night I prepared your blueberry French toast, much healthier and served it this morning to a very pleased crowd. Thanks for your many suggestions for trimming the fat in such a delicious way.
