A quick and easy side for your 4th of July menu and backyard BBQ! Feel free to pass the potatoes since this potato salad is light and healthy~ dressed with fresh herbs, olive oil and vinegar and liberated from mayonnaise and eggs!

I agree, Mary. How can it be that July 4th is upon us again? All my patriotic things are packed away in storage, and I don’t have the motivation to go retrieve them. I’m settling for some red, white, and blue flowers here in the house this July. I dislike living in limbo, but that’s what it is for now. ‘-)

I giggle everytime I see patriotic peeps! So many goodies. The lemonade is probably on my diet! :)
