Cinco de Mayo: A Fiesta of Flavor and Recipes!

Cinco de Mayo is in cuatro days and I have a round-up of recipes with a fiesta of flavor for your celebration!

To start your fiesta, let’s mix a Cucumber Margarita! This is a favorite margarita we enjoy in the summer with the cool and refreshing flavor of cucumber and lime. I discovered this Cucumber or Pepinita Margarita at a local Mexican restaurant. I’m not a fan of sweet drinks or the artificial taste of sweet-and-sour mix. If you’re a fan of cucumber, I think you’ll like this margarita too! Our local Mexican restaurant uses Tajín as a rimmer (chilies plus lime and salt). I used a Chili & Lime Spice Blend, mixed with Kosher salt.

Cucumber Margarita

Ingredients:

2 oz. Silver tequila or tequila of choice

2 oz. English or hot house cucumber, grated. Seed and dice cucumber and muddle if you prefer.

1 oz. lime juice

Light agave nectar, to taste

Grate your cucumber into a cocktail shaker. Add ice, lime juice, light agave nectar and tequila. Shake, strain and serve.

Rimmer:

Use a lime wedge around the edge of your glass then Tajín or chili-lime-salt blend to rim. Garnish with a slice of cucumber or lime.

 These cheesy corn flour cups can be filled with a variety fillings.

I filled mine with a mixture of guacamole, corn, black beans, salsa and some with leftover pulled pork. Garnish with sour cream, Queso Fresco, cilantro or jalapeno.

No celebration is complete without some chips & salsa or guacamole! Help yourself to some Cinco De Mayo Mini Taco Dips, mini layered dips for an individual or fiesta serving!

    Is it wrong to crave a cucumber margarita and corn and bacon guacamole for breakfast? Your round up is making me drool Mary, you have so many perfect recipes for celebrating Cinco de Mayo! I am doing a round up this week too, and had trouble narrowing it down…ok, now I’m craving empanadas and a key lime cupcake…so many choices! Two of my all time favorite photos of yours are in this post, the Sangria pitcher against the water and the table set with the yellow pot of flowers surrounded by vegetables, gorgeous!

    Wow you are amazing. I enjoyed just looking at the pictures and the recipes all sound great. I had to laugh at the last picture- we have a restaurant that serves a sandwich called “drunken chicken wrap” and that picture would be funny next to it! Happy Cinco de Mayo!
