This is my favorite kind of recipe, since it’s really more of a method or procedure, adjusting to your taste. You can make these sweet finger sandwiches with a store-bought pound cake or use your favorite recipe to make your pound cake from scratch. I picked up a ready-made pound cake from the bakery at the grocery store for quick assembly.

If you’re making your pound cake from scratch, I would recommend using a loaf pan so it’s easier to cut your slices the same thickness without the curve in a cake from a Bundt or tube pan.

Spread your pound cake slices with chocolate buttercream or the frosting of your choice.  Next spread a layer of strawberry-cream cheese on top of the layer of frosting and top with another slice of frosted pound cake, frosting side down to make a sandwich.

For the cream cheese filling, I used a softened 8 oz. package of Neufchâtel (light cream cheese) mixed with 1/3 cup of strawberry preserves. Feel free to use regular cream cheese and the flavor of jam or preserves you like~ raspberry would be good if you don’t mind the seeds.

I found it easier to top the frosting with the cream cheese spread after chilling the frosted slices in the freezer for 15 – 20 minutes. I put the assembled sandwiches back in the freezer for 15 minutes to firm up a bit before cutting through the filling layers. Trim each sandwich so they’re square and then cut each sandwich into thirds. Wipe your knife clean with a damp paper towel after each cut to keep your pound cake slices and sandwiches neat.

    Mary, that picture with all the tea cups in the basket has me drooling! How utterly beautiful! I wouldn’t know which one to choose for your tea party! The sandwiches look as beautiful as they must taste. It looks like you trimmed the crusts, too. I thought I’d mention that it’s possible to buy seedless raspberry jam if you don’t want to taste the seeds. Sometimes you have to look a little harder since not all grocery stores stock them. When I see them I usually pick up a couple of jars to have on hand. Thank you for a most delightful post.
