Chocolate-Drizzled Salted Butter Pecan Bites

 Chocolate-Drizzled Salted Butter Pecan Bites! So indulgent, rich and caramelly, no one would ever guess how easy they are to make! A drizzle of dark chocolate makes these the perfect Valentine’s Day treat.

 Salted Butter Pecan Bites are one of the many delicious recipes in The Southern Living Party Cookbook.

Salted butter, brown sugar and toasted pecans marry to make a caramelly delicious treat! They’re also super easy to make and start with a layer of graham crackers.

With Valentine’s Day around the corner, I added a drizzle of dark chocolate . . .

Because, well. . .Chocolate!

Salted Butter Pecan Bites with Chocolate Drizzle,

recipe adapted The Southern Living Party Cookbook

Ingredients

1 cup chopped pecans

Graham crackers

1 cup packed brown sugar

3⁄4 cup salted butter (12 tablespoons)

2 tablespoons whipping cream

1 teaspoon vanilla extract

Fleur de Sel or flaked sea salt

Optional: Half of a 12 oz. package dark chocolate chips (I used Hershey’s Kitchens Special Dark Chocolate Chips)

Preheat oven to 350°F. Bake the pecans in a single layer in a shallow pan 10 to 12 minutes or until toasted and fragrant, stirring halfway through.

Line a 15- x 10-inch jelly-roll pan with parchment paper. Arrange the graham crackers in a single layer in parchment-lined pan, so crackers completely cover the bottom of pan.

Combine the sugar, butter, and cream in a medium-size heavy saucepan; bring to a boil over medium heat, while stirring. Remove from the heat, and stir in the vanilla and pecans. Pour the butter mixture over the crackers, spreading to coat.

Bake in the preheated oven for 10 to 11 minutes or until lightly browned and bubbly. Remove from oven and immediately sprinkle with sea salt. Allow to stand 10 minutes before lifting edges of parchment paper and removing from pan, transferring onto a wire rack. Cool completely, about 30 minutes. Cut into serving pieces.

Optional chocolate drizzle:

Melt chocolate chips according to package directions. Transfer melted chocolate to plastic zip top bag, snip end of bag and drizzle melted chocolate over pieces. Allow chocolate to set. Store in airtight container until ready to serve.
