My hubby is a cheese-aholic and we always have store-bought pimiento cheese in the fridge. This pimiento cheese recipe from Martina’s Kitchen Mix: My Recipe Playlist for Real Life, is oh so good and is addictive. It would make a mean grilled cheese sandwich (with bacon!), topping for your burger, or Martina’s ad lib, stirred into hot cooked pasta and then broiled for quick and easy mac and cheese!

Pimiento Cheese is the Pâté of the South. Like Sweet Tea, it’s a staple served at luncheons, showers, and right alongside cold fried chicken and deviled eggs at a covered-dish supper or proper Southern picnic!

Spelled either pimiento or pimento, for those above the Mason-Dixon line, we pronounce it pimenacheese here in the South. :) However you pronounce or spell it, ingredients vary and favorite recipes are debated from the brand of mayonnaise (Duke’s for us) to the blend of cheeses and additional ingredients like onion, paprika or jalapeño peppers, to name a few.

Smoked Gouda Pimiento Cheese

Yield: 4 cups

Ingredients

1 cup mayonnaise

1 (7-ounce) jar diced pimiento, drained and *rinsed

1 teaspoon Worcestershire sauce

1/2 teaspoon garlic powder

1/4 to 1/2 teaspoon cayenne pepper, depending on taste (we like some heat and 1/2 teaspoon was perfect for us)

1 (8-ounce) block extra-sharp Cheddar cheese, shredded (about 2 cups)

1 (8-ounce) block smoked Gouda cheese, shredded (about 2 cups)

*Don’t skip the step of rinsing your diced pimiento or it will be too salty. For the creamiest pimiento cheese, buy the cheese in blocks and shred by hand (pre-shredded is dry).

    Not being a Southerner, I’d love to try this recipe, however w/o the smoked Gouda. Can I simply omit or do I need to add more extra sharp Cheddar cheese?

      Sub another type of cheese, add more Cheddar or cut the mayo and other ingredients in half. :)

    Mary, we love smoked Gouda at our house and it is always in my 4 cheese mac and cheese. You are right pimiento cheese is a Southern staple. I will have to try this recipe for sure!

    Loved the correct pronunciation of pimenacheese and the recipe! As an former Southerner and expat from the Netherlands (Nederlands) Gouda is correctly pronounced Howda.

    This recipe sounds delicious with the gouda. You’re right. Us Southern girls do pronounce it pimenacheese. I’d never even thought about it until I saw it spelled that way. :-) I love it with jalepeno slices, too. I’ve always made mine with just the shredded sharpe cheddar. It has to be on white bread, a little butter on the top bread slice and toasted in the toaster oven. I can’t wait to try this recipe.
    It’s funny how certain things can stir memories. When my brother was a little boy (around 4 or 5 ) he hated cheese….or so he said. My mother would made “pimenacheese” for lunch, but we had to call it a pimento sandwich or he wouldn’t eat it. I think of that every time I make pimento cheese.

My uncle is from Louisiana and I always wondered where he got the idea to put pimento cheese on grilled cheese sandwiches. Now I know. And there is no better mayonnaise than Duke’s. It’s hard to find here but I seek it out.

    Oh, my! Count me in! I love cheese and this looks wonderful! Will pin to try as soon as hubby is over the flu. Our choice of mayo in the north is Hellman’s Real Mayonaise. Have you ever tried that brand Mary? I love it. I think I saw Duke’s at a Walmart, will keep that in mind when I make it. Thanks!

I laughed at your sweet southern “pimenacheese” way of saying it, I can hear that southern drawl so clearly! 😃 In the north our favorite mayo is Hellman’s Real Mayonaise, love it. Have you ever tried it Mary? I wonder if the taste is close to your favorite, Duke’s? I believe I saw Duke’s up north at the Walmart store last summer, so I’ll have to look at our local Walmart when I make this. I like to make the recipe exactly as it states.
