I used a simple lemon-confectioners’ sugar glaze to drizzle

Almond Beehive Cakelets with Lemon Glaze

Mini beehive cakelets are buzzing with flavor. . .almond extract and a lemon glaze for a sweet treat at teatime.

Equipment

  • Nordic Ware Beehive Cakelets Pan

Ingredients

Cakelet Ingredients

  • 1 1/2 cups flour
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup butter softened
  • 1 1/2 cups sugar
  • 4 large eggs
  • 1 tsp almond extract
  • 2/3 cup plain yogurt

Lemon Glaze

  • 1 cup confectioners' sugar
  • 2 to 3 tablespoons fresh lemon juice

Instructions

  • Preheat oven to 350° F. Prepare Beehive Cakelet Pan with baking spray containing flour and use a pastry brush to evenly coat the cavities of the pan.
  • In a small bowl, mix flour, baking soda and salt and set aside.
  • Using a mixer with a paddle attachment, cream butter and sugar. Add eggs and almond extract and blend thoroughly.
  • Mix in flour mixture and yogurt until smooth. Pour into prepared pan, filling each cavity 3/4 full. Gently tap pan on towel-covered counter to release air bubbles.
  • Bake for 25-30 minutes or until toothpick inserted into center of cakes comes out clean. Remove from oven and let cakes cool in pan for 8 minutes before inverting onto a cooling rack.
  • Wash pan, prepare with baking spray and repeat with remaining batter.
  • To make lemon glaze: Place confectioners' sugar in a medium bowl; stir in lemon juice (glaze should be thick, yet pourable). Add more sugar or lemon juice, as necessary, to achieve desired consistency. Drizzle over cooled cakelets.

Notes

Substitute vanilla extract for almond extract if desired.

    Wow, what a terrific collection and setting for your first tea on Tuesday! I love it all, but the tea itself, inspired from the Roaring Twenteas, is perfect for me, both in the flavor description and fitting the theme.
    Your eye for adding to your bee service collection is ever so tasteful. HG has offered some great elements over the years. That cloche is very cool. The Amazon napkin rings are super stylish, rivaling some over-the-top brands. I’ve made those cakes and they are so good (esp when heavy hanging the almond extract. 😉). And, of course, the florals are gorgeous. I’d love to make a beeline right over and enjoy it all in person! Happy Tuesday!

You have a beautiful collection of all things bees! The Harney & Sons tea blend sounds refreshing and is lovely served in the canning jars with the pineapple mint. The bee skep cookie jar is the perfect centerpiece. I love that bees are buzzing all over your table from the tablecloth to napkins and rings to embossed salad plates and landing in the flowers.     I don’t know what happened to my comments Mary….I seem to have lost them. so rather than try to repeat my lengthy response…I can’t remember what happened yesterday let alone all that I typed this morning. LOL
    I LOVE your bee table and one thing I remember from my previous meanderings was my comment on your love for our little bees. Your attention to detail is as always amazing. Two of my friends recently had to have a beekeeper come and remove bee hives from their properties as mailman complained and the other hive was in the garden hose box.     How wonderful, Mary! We are thrilled with the new Tea on Tuesdays! I went to France 🇫🇷 3 years ago and have made my new kitchen a French Country one with blue&white dishes/linens, yellow walls and white wainscoting. I have the same bee magnets on my refrigerator doors! 🐝 Please share the name/design of the place setting mats with lemons and olives… I would love to find some!     I bought some bee napkin rings in Italy this past summer that I have not used. They are the only bee thing I have. I need to use them.

    What a tablescape you have set, buzzing with happiness! This post makes me want to bake something with lemons, visit the Mothership of Home Goods with wild abandon, and set a new table today.

    I must share that I recently house-sat for a family member and couldn’t help but feel like a bit of a hoarder after seeing how few linens they had in the home. I returned home thinking I would clean house. Thankfully, your post is a most welcomed intervention preventing me from making the mistake of discarding beloved linens. Whew, that was a close call!
