No-Bake Coconut Orange Snowballs

This no-bake cookie recipe checks all the boxes! In addition to being no-bake, these snowballs are a crowd-pleaser with a delicious combination of coconut and orange, can be made ahead, and stored in the refrigerator or freezer until ready to gift and serve.

Ingredients

  • 12 oz. box vanilla wafers crushed
  • 1/2 c. 1 stick butter, melted
  • 1 lb. box powdered sugar 3 ¾ cups
  • 1 6 oz. can frozen orange juice concentrate, thawed
  • 1 tsp. vanilla
  • 1 c. chopped pecans
  • 8 oz. pkg. shredded coconut there will be some left over

Instructions

  • Pulse vanilla wafers into fine crumbs in food processor.
  • In a large bowl, add sugar and chopped nuts to wafers, stirring together to combine.
  • Add melted butter, vanilla and thawed orange juice concentrate and mix together. Mixture will be sticky.
  • Scoop out by large tablespoons and roll into bite size balls between hands.
  • Roll balls in coconut. Keep refrigerated.

Makes approximately 5 dozen.
