Cucumber and Strawberry Salad
A refreshing and light salad for spring or summer.

- 1 large cucumber 1 English/seedless, if using American cukes use two
- Strawberries 8 - 12 ounces
- Salt and fresh ground pepper to taste
- Sprinkle of sugar
- 3-4 tablespoons of white balsamic vinegar
- Sprinkling of chopped fresh herbs mint, basil or tarragon
- Optional: Violas for garnish. use nasturtiums or other edible flowers (pesticide and chemical free) to serve.
Peel cucumber if desired before thinly slicing.
Slice strawberries, arrange in alternate circles in rows in shallow serving dish.
Season with salt, pepper, sugar.
Spoon the balsamic vinegar and sprinkle with herbs. Chill well.
Decorate with violas, pansies, nasturtiums or other edible flowers (pesticide and chemical free) to serve.
