Pecan Bourbon Balls

Ingredients

  • 1 12-oz. package vanilla wafers, finely crushed
  • 1 cup powdered sugar plus more to coat balls
  • 1 cup finely chopped *toasted pecans plus more to coat balls
  • 1/2 cup bourbon
  • 2 tablespoons unsweetened cocoa
  • 2 tablespoons light corn syrup

Instructions

  • Stir together all 6 ingredients (or pulse everything together in the food processor for easy mixing). Shape into 1-inch balls. Roll in powdered sugar or chopped pecans.
  • Refrigerate up to 2 weeks.
  • *To toast pecans: Place chopped pecans in a dry skillet on your cooktop on medium heat or on a parchment-lined baking sheet in the oven at 350 degrees until golden brown and fragrant, about 5-10 minutes. Allow to cool.
