Ingredients

  • Watermelon puree
  • Juice ½ lime
  • 1 1/2 - 2 oz. light rum
  • 2 oz. mint simple syrup or more to taste
  • Sparkling water, plain or lime flavored

Instructions

For Watermelon Mojito:

  • To ice filled glass add:
  • 1/2 cup (4 ounces) fresh watermelon puree
  • Juice of half a lime
  • 1 1/2 – 2 ounces light rum
  • 2 ounces mint simple syrup, or more to taste
  • Sparkling water to top off, (plain or lime flavored sparkling water)
  • Garnish with mint, lime or watermelon wedge if desired

For watermelon puree:

  • Cut seedless watermelon into chunks.
  • Add to blender and puree until smooth. Pass watermelon through a strainer, discarding pulp and reserving watermelon liquid.
  • Keep watermelon puree in the fridge to mix with sparkling water or lemonade.

Mint-infused simple syrup:

  • 1/2 cup packed fresh mint
  • 1 cup sugar
  • 1 cup water
  • In a small sauce pan, combine mint with sugar and water; bring to a boil until sugar is dissolved.
  • Remove pan from the heat and allow to cool. Strain through fine mesh sieve and store in refrigerator up to 2 weeks.

Notes

For a mocktail, omit rum and add additional sparkling water.
