No Bake Peanut Butter-Chocolate Swirl Bars

Ingredients

  • 10 tablespoons unsalted butter
  • 1 1/4 cups creamy peanut butter
  • Pinch kosher salt
  • 1 1/2 cups crispy rice cereal such as Rice Krispies
  • 1 3/4 cups powdered sugar
  • 1 cup 60% cacao bittersweet chocolate chips
  • 6 teaspoons refined coconut oil divided
  • 1/2 cup white chocolate chips
  • 1/3 cup roasted salted peanuts roughly chopped (optional)

Instructions

  • Line an 8-inch square baking pan with parchment paper, allowing ends to extend over sides.
  • In a large bowl, mix cereal and powdered sugar to combine; set aside.
  • In medium sauce pan, melt butter over medium heat; add salt and stir in peanut butter. Heat and stir until peanut butter is incorporated, smooth and melted.
  • Pour melted peanut butter mixture over cereal, stirring to combine; take care not to crush cereal.
  • Pour into prepared pan, and spread with spatula.
  • Melt chocolate chips according to package directions, and stir in 4 teaspoons of coconut oil until thoroughly combined.
  • Pour bittersweet chocolate over cereal mixture, spreading chocolate evenly over top with offset spatula.
  • Melt white chocolate according to package directions; stir in remaining 2 teaspoons of oil until combined.
  • Spoon dollops of white chocolate on top of chocolate layer. Using a wooden pick or skewer, make a swirl pattern in chocolate.
  • Sprinkle top with chopped peanuts, if desired.
  • Refrigerate until set and bars are sliceable, about 2 hours. When bars are firm and set, lift out of pan by edges of paper and place on cutting board. Cut into 16 squares.
  • Store bars in refrigerator in an airtight container until ready to serve.

Notes

Refined coconut oil has a neutral flavor that won’t affect the taste of chocolate. You can substitute any flavorless oil for coconut oil such as canola or vegetable oil.
