Why Spiced Rum Makes the Best Rum Balls

Rum may all come from sugarcane, but it varies wildly in flavor, so your choice of rum can completely change the taste of these finished treats.

  • White rum is clean and mild with little flavor.

  • Gold rum adds gentle caramel warmth.

  • Dark rum is bold and molasses-heavy.

  • Coconut rum adds sweetness but leans tropical.

But spiced rum is truly the star for this recipe. Its warm notes of cinnamon, vanilla, nutmeg, and clove echo the caramelized spice already found in Biscoff cookies. Together, they create a flavor that deepens as rum balls rest in the refrigerator—making them perfect for gifting, entertaining, or stashing away for holiday nibbling!

I love these with Bacardi Spiced Rum, but use your favorite brand or variety of rum to suit your taste.

Choose one or mix several for a festive assortment If using one type of coating, you’ll want about 1 cup crumbs in total:

  • Unsweetened desiccated coconut

  • Finely chopped pecans or walnuts

🍫 How to Make No-Bake Spiced Rum Balls

1. Pulse the Dry Ingredients

Add pecans and Biscoff cookies to a food processor. Pulse until finely ground. Add confectioners’ sugar and cocoa powder and pulse a few more times to combine.

2. Stir in the Wet Ingredients

Transfer mixture to a large bowl. (Avoid adding the wet ingredients in the processor—the mixture becomes greasy and overprocessed.)
Stir in the spiced rum, vanilla, and honey until a thick, sticky dough forms. Let rest 10 minutes so the crumbs can absorb the liquid.

3. Roll in Your Favorite Coatings

Scoop about 1 tablespoon of dough and roll into a ball between your palms. The mixture will be slightly wet, ideal your coating of choice to adhere. Roll in coating  and place on a parchment-lined baking sheet or tray.

4. Chill for Best Flavor

Refrigerate covered, ideally 24 – 48 hours. The flavor becomes wonderfully smooth and mellow as the rum and spices absorb into the cookie mixture.

You don’t need to store rum balls in the refrigerator as long as you keep them in an airtight container, but I find they have the best flavor and last the longest when kept cold. They’ll last a couple of weeks refrigerated in an airtight container, 5 days at room temperature or freeze up to 3 months.

For serving, place rum balls in mini cupcake liners to keep coatings tidy and a festive presentation. Note: Wait to place rum balls in paper liners before gifting / serving so paper liners don’t ‘wilt’ after a stint in the fridge.

FAQ: Everything You Need to Know About Rum Balls

Can I make these without alcohol?

Yes, replace the rum with ¼ cup orange juice + ¼ cup apple juice or cider. The flavor will be different—fruitier and more mild.

What’s the best rum to use?

Spiced rum adds the richest, warmest holiday flavor. Dark rum gives an intense molasses base, while white rum is mild and understated. Coconut rum adds sweetness but isn’t as seasonal.

Can I use a different cookie instead of Biscoff?

Absolutely. Nilla Wafers, gingersnaps, or graham crackers all work. Keep in mind each will change the flavor slightly.

How do I make them nut-free?

Simply replace the pecans with 12–14 additional Biscoff cookies and coat in cookie crumbs, cocoa, or sprinkles.

Why won’t the coating stick?

If the mixture sits too long, it can dry out. Roll the rum balls while the dough is still tacky for best coating.

How long do they last?

You don’t need to store rum balls in the refrigerator as long as you keep them in an airtight container, but I find they have the best flavor and last the longest when kept cold. They’ll last a couple of weeks refrigerated in an airtight container, 5 days at room temperature or freeze up to 3 months.

Can children eat rum balls?

No. These contain uncooked alcohol and should be kept separate from children’s treats.

Why do rum balls taste better after a day?

As the mixture rests, the rum and spices meld with the cookie crumbs, creating a richer, smoother, more cohesive flavor.

Your Spiced Rum Balls are beautiful, Mary, and thank you for the tip on using the liners right before serving. I have to admit that I’ve never been a fan of rum balls, but spiced rum, which I’ve never heard of, might make me be a believer! Thank you for sharing 💚🌲❤️

Mary, I am sorry I am late to comment. I love a no-bake, easy sweet treat. Years ago we had a department store that had a bakery. Each December they had delicious rum cake. I could never pass by their counter without buying a slice. It is a sweet memory of yesteryear! I am off to Birmingham for an early appointment. Merry Thursday!
