Peter Rabbit’s Carrot-Zucchini Muffins! Inspired by Beatrix Potter The Complete Tales, these muffins are sure to please everybunny with the addition of carrot, zucchini, apple and coconut!

I’m embracing my inner 5-year-old with Beatrix Potter The Complete Tales, beautifully reissued and the complete and unabridged collection of all 23 of Beatrix Potter’s Tales with all their original illustrations. It would make a wonderful baby shower gift or keepsake volume to share with your grandchildren!

If you need a refresher course like I did, the stories are arranged in the order in which they were first published so they may be read in their proper sequence. A special section at the end of this volume contains four additional works by Beatrix Potter that were not published during her lifetime.

Beatrix Potter’s tales were often connected with real places, people, or animals, so each story includes a brief introductory note about its history. The story of Peter Rabbit in Mr. McGregor’s garden first appeared in a picture letter Beatrix Potter wrote to the young son of her former governess in 1893. Encouraged by her success in having some greetings card designs published, Beatrix remembered the letter seven years later and expanded into a little picture book, with black and white illustrations. After being rejected by several publishers,  Beatrix had it printed herself to give to family and friends. Frederick Warne agreed to publish the tale if she agreed to supply color photos and the book appeared in 1903 and was an instant success.

For a little novel baking fun,

I adapted a recipe for Carrot-Zucchini Muffins,

sure to please everybunny with the addition

of carrot, zucchini, apple and coconut,

including naughty and hungry rabbits :)

And I found Peter Rabbit Cupcake Holders

with a little wheelbarrow for

muffin or cupcake toting fun :)

Peter Rabbit’s Carrot Zucchini Muffins,

adapted from Taste of Home

TOTAL TIME: Prep: 15 min. Bake: 20 min. + cooling MAKES: 18 muffins

Ingredients

2 cups shredded carrot

1 cup shredded zucchini

1 cup peeled shredded apple

3/4 cup flaked coconut

1/2 cup chopped walnuts

2 teaspoons orange zest

2 cups all-purpose flour

1 cup sugar

1 tablespoon ground cinnamon

2 teaspoons baking soda

1/2 teaspoon salt

3 eggs, lightly beaten

3/4 cup canola oil (I used a combination of unsweetened apple sauce and canola oil to make 3/4 cup)

1 teaspoon vanilla extract

Directions

Gently toss together carrot, zucchini, apple, coconut, walnuts and orange zest; set aside.

In a large bowl, combine flour, sugar, cinnamon, baking soda and salt. Combine eggs, oil and vanilla; stir into dry ingredients just until moistened (batter will be thick).

Fold in carrot mixture. Fill greased or paper-lined muffin cups two-thirds full.

Bake at 375° for 20-22 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack. Yield: 18 standard size muffins.

These are wonderfully moist and a great muffin for breakfast!

    I have those same peter rabbit wheelbarrows! I use them as part of my Easter tableware. Each place setting gets one filled with Easter grass and some candy. It”s a hit all the time!

    I decorated my oldest daughter’s nursery in a Peter Rabbit theme. I love Beatrix Potter and all her characters. Her home, Hill Top, is on my bucket list of places to visit.

    how adorable and informative! i love that you share so much verbally, as you know i am rather quiet ;-) you also know i am visually enamored with ALL you do! this is sooooooooo sweet, love the big and small wheelbarrows, loading the table down with goodness!

    When I stop by HIWTBI, I feels as if I’ve gone to a magical place, and today is no exception. I sense your playful spirit with the bunny brigade, pushing those muffins (I am imagining a country lane, the smell of freshly cut grass in the air, daffodils blooming in the field). I love the way you repeated elements (just like a poet) with the wheelbarrows and carrots. The muffin recipe will be perfect for Dr. W–a delicious way to get Vitamin A.     Hi Mary,

    What a wonderful post!! I’ve been a Peter Rabbit fan for many, many years now. When I was pregnant with our son, we did a Peter Rabbit nursery. I didn’t want to know the gender of the baby (wanted to be surprised) so we painted the walls of the nursery pale blue with white trim. The crib set was Beatrix Potter Peter Rabbit in pastel colors; we felt like the blue would work for a boy and all the pastels would work for a girl. I loved that nursery, and I’ve saved all the Peter Rabbit things that Will got as a baby.

    I’ve read some more about Beatrix Potter very recently, and what an interesting life she had. She was an amazing woman and so very talented. I love that her work has withstood the test of time and can still be enjoyed by young and old alike.

    I LOVE, LOVE your wheelbarrow cupcake holders — they’re adorable. Your muffins look and sound delicious! You’ve also made me want to purchase this re-release of the Beatrix Potter stories. ;) Thanks so much for sharing with us; I look forward to a week of Beatrix Potter and Peter Rabbit and friends. :-D

    Mary, I’ve been anticipating Beatrix Potter Week since the Novel Bakers announced the theme. I’ve pulled out my Bunnykins dishes with the thought I’ll set my own table inspired by all the bunny goodness that you girls have planned. Darling wheelbarrow cupcake holders! I would have bought those too. The muffins sound delicious, and I so wish some were sitting in my kitchen fresh from the oven. I’m hungry! ‘-)

    When my kids were small we used to read Beatrix Potter’s books. I wish I had a small child in our midst again so I would have a valid excuse to get this book…

    Simply adorable Mary, I swear I can just see those rabbits madly pushing their wheel barrels of treasured carrot muffins all about! You have given me the best idea for an Easter gift for my grandchildren, this book would be a gift for all of us! And the recipe, well it sounds very healthy to me :) I can’t wait to see what the mischievous bunnies have in store for us the rest of the week!
