This snack mix starts with Chex Cereal. To pair with the pumpkin spice,

I used a combination of Cinnamon Chex and Honey Nut Chex

but feel free to mix and match the Chex flavors of your choice

if you already have Rice, Corn or Wheat Chex in your pantry.

You’ll need 6 cups of cereal for this recipe.

Ingredients

1/4 cup brown sugar

1 tablespoon pumpkin pie spice

6 tablespoons salted butter

2 teaspoons vanilla

3 cups Cinnamon Chex cereal

3 cups Honey Nut Chex cereal

1 cup small pretzels

1 cup salted cashews (or nuts of choice)

1 cup Pumpkin Pie M&M’s  (or plain M&M’s)

1 cup Candy Corn or Harvest Corn

Optional: M&M’s Halloween Cocoa Crisps, Target exclusive

Directions

Mix cereal and pretzels in large microwaveable bowl; set aside.

In small microwaveable bowl, microwave butter on high about 30 seconds or until melted.

Stir in brown sugar, pumpkin pie spice and vanilla. Pour over cereal mixture; stir until evenly coated.

Microwave uncovered on high in 1 minute increments, for 5 minutes,

or until mixture begins to brown, stirring after each minute.

Spread on wax paper or a cookie sheet to cool.

Note: Microwave wattage varies.

After 3 minutes, reduce microwaving to 30 second increments,

watching and stirring so butter / sugar mixture doesn’t scorch.

When mixture has cooled, mix in nuts and candy. Store in airtight container until ready to serve.

Instructions

  • In large microwavable bowl, mix cereal and pretzels. Pour butter mixture over cereal mixture, stirring until evenly distributed.
  • Microwave uncovered on high in 1 minute increments, for 5 minutes, or until mixture begins to brown, stirring after each minute.
  • Spread on wax paper or a cookie sheet to cool.
  • When mixture has cooled, mix in nuts and candy. Store in airtight container.

Notes

  • Microwave wattage varies. After 3 minutes, reduce microwaving to 30 second increments, stirring so butter /sugar mixture doesn’t scorch.
  • Adjust the quantities of add-ins. . .nuts, candy and pretzels to your taste. I used salted butter to help balance the sweet of the cereal and candy, but use unsalted if you prefer.
  • Instead of microwave, alternatively bake in oven at 250 degrees, stirring every 15 minutes, until lightly browned and crisp, 45 minutes.
  • Once completely cooled, store in an airtight container at room temperature. Will keep for several weeks if it lasts that long.

      They had the pumpkin pie M&M’s last year, too. I found them at Target last year and this year. I also found Pecan Pie M&M’s at Walmart this year! They are so good! I made cookies with them, and everybody loved them. :)

    Mary, this brings back sweet memories of my mom. Every fall, she would mix up a big recipe of what she called “trash”. Her’s never included candy treats, but nuts and such. It was the fall snack!

    Mary, ditto on the memories. My mom always made gorp or some type of mix in the summer and fall as a prelude to the traditional holiday chex.     I love the idea of having this snack on hand for Halloween! It’s nice to have something to munch on between the Trick-or-Treater’s coming to the door. This will be so much nicer than just eating the candy from the bin. I’ll tell myself it’s healthier because it is, after all, Chex cereal in the mix (he-he!). I better run to Target today and pick up the seasonal M&M’s before they’re all gone!
