Yes, it’s Super Bowl weekend soon to be followed by Valentine’s Day. Translation= Lots of eating on Sunday night followed by a week of chocolate. Soooo… I’m taking Dr. Oz’s advice and trying to add more fresh fruits & veggies. Fruits and veggies cancel out chicken wings, pizza, potato skins and candy, right?? Or is it that foods consumed on Super Bowl Sunday don’t count? Something like that…
Apples have lots of health benefits. I ran across this recipe somewhere in all my ‘healthy’ eating tips either in a magazine or an email, and it’s surprisingly good for how simple it is. It’s also a nice change from just eating a plain ole apple.
Slice one apple, place on oven-proof plate or dish.
Sprinkle with cinnamon.
Sprinkle some chopped walnuts or pecans.
Add a couple of tablespoons of blue cheese (or some taleggio is good too, if you don’t mind the smell!)
Bake at 350 degrees for 5 – 7 minutes, long enough for the cheese to melt and apples to soften just slightly.
Gosh, that looks good. I wouldn’t have thought to use bleu cheese with apples, but now that I’ve seen it, I think it’s a capital idea. Looks great!

Oh, I love blue cheese and to pair it with apples sounds delicious. My mouth is watering right now…
I’ve never had bleu cheese with apples, only with pears. This looks pretty wonderful.
