Help yourself to Blueberry-Almond French Toast, made a little healthier so you can indulge, guilt-free, for breakfast or brunch!
This French toast comes together in under 10 minutes. Refrigerate it overnight and then pull it out to bake it in the morning, perfect for company or a lazy weekend morning!
It’s made healthier with a combination of whole eggs and egg whites and a whole-wheat baguette for some crusty texture and additional fiber and protein from whole grains.
It’s topped with a sprinkling of blueberries and almonds for some nutrition, flavor and crunch.
Serve it with a side of flowers . . .

I used unsweetened vanilla almond milk for a dairy-free alternative for this recipe and some additional vanilla flavor, but feel free to use skim milk or 1% lowfat milk, with a little more body but still lower in fat and cholesterol.
Guilt-Free Blueberry Almond French Toast, recipe adapted from Ellie Krieger
Spray a 9 by 13-inch baking pan with nonstick spray. Arrange the bread in a single layer in the baking pan. Whisk together the eggs, egg whites, milk, vanilla, cinnamon and maple syrup. Pour the egg mixture over the bread in the pan so the liquid saturates the bread.
Scatter the blueberries evenly on top and sprinkle with the almonds and brown sugar. Cover and refrigerate overnight.
The next morning, preheat the oven to 350 degrees F. Bake uncovered for 45 to 55 minutes.
Serve with a dusting of powdered sugar and syrup if desired.
