Peter Rabbit Chocolate Zucchini Cupcakes

 I found a Peter Rabbit Cupcake Kit which called

 for a batch of Peter Rabbit Cupcakes,

complete with Jemima Puddle-Duck, Tom Kitten

and Benjamin Bunny!

So I found a recipe for Chocolate Zucchini Cupcakes~

a recipe that everybunny would enjoy :)

I made a few changes to the original recipe after reading the reviews. These cupcakes are a delicious way to use zucchini, which adds moisture rather than a distinct flavor!

Chocolate Zucchini Cupcakes,

adapted from Taste of Home

Makes 2 dozen cupcakes

Ingredients

1-1/4 cups butter, softened
1-1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
6 oz. container plain yogurt
1/2 cup mini chocolate chips
2 cups grated zucchini

In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, cocoa, baking powder, baking soda and salt; add to the creamed mixture alternately with yogurt, beating well after each addition. Fold in zucchini and chocolate chips.

Fill paper-lined muffin cups two-thirds full. Bake at 350° for 20 – 25 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

I have greatly enjoyed your recent postings on this theme and have ordered several of the complete tales book sets.     What a great way to use up zucchini and get veggies into your children’s diet! They will never know that they are eating Zucchini!

    Forgot to tell you….my mother-in-law read “Peter Rabbit” religiously to her children when they were small in the 60’s. She handed the book down to us when our kids were little, which we, in turn, read to them. So sweet! She wrote on the inside front cover the date, which I think was 1965, and a little ditty. So, I have a special place in my heart for Peter Rabbit! Thx for sharing!!!

    I have baked with zucchini, and can’t wait to try these cupcakes, they are almost health food!! I love the pansy topped icing with all the adorable character cut-outs! As always, I am so sad when the Novel Bakers week comes to an end~thank you for such a memorable trip to Mr. McGregor’s garden and all the delicious eye candy and goodies along the way!

    Mary, your cupcakes are the cutest ever. I can’t stop pinning! It’s been a fun, memorable week, hasn’t it? I am such a foodie Philistine, I never thought to combine zucchini and chocolate in a cupcake–a stroke of genius. Your photos are so beguiling–I’d love to frame them. I vote for a Beatrix Potter Part II in 2015, Lord willing and the creek don’t rise, of course.

    i just love it when veggies go dark… as in CHOCOLATE! these are so darn cute, my finger just wants to swirl up a big scoop of that frosting… looks luscious! love your picks and pansies, such a sweet touch to an already delectable cupcake! your book pairings are adorable.

    what a fun fun fun week with you both, even though you were out pairing fruits this week you left us dazzled with all you magic from home. heavy sigh, it was really a remarkable week with you both, i will be sad to see the books close tomorrow…

    Mary, these are so cute sitting upon the pages of Beatrix’s classics. I bought the same kit, but planned to make carrot cake cupcakes. Love the addition of the pansy bloom.
    Hate for this week to come to an end. You’ve no idea how much fun this has been for me and no question hundreds of other readers. The Novel Bakers are incredibly creative and talented.

    Hello Mary, Loved everything Beatrix Potter this week. Have wonderful memories of making sure my daughter had the full set for Easter, through the years! I sat down to read at 11:30 P.M. Thursday nite and read your post on the book, Beatrix Potter’s Gardening Life, Marta McDowell. I called our local lib. Friday, they had it at another lib close by, in there new book section,I drove to pick it up, and I can’t put it down!!! Best book I have had the joy of holding and reading in a LONG time! A must read for anyone who loves history, English life, plants, nature and homes! Sooo FUN! Thank you!
