I have a no-bake cookie that is an oldie but a goodie!

I was first introduced to this cookie at one of my bridal showers,

back when Vanilla Wafers came in 12 oz. instead of 11 oz. boxes,

and were larger than they are now. :)

 I used to make two recipes of these Coconut-Orange Snowballs for our store’s annual Christmas open house,

which was approximately 10 dozen cookies. They were always consumed down to the last flake of coconut

and we were always copying the recipe for our customers.

Like all snowballs, they need a cold environment!

Store these cookies in the refrigerator and serve them chilled.

They freeze great and you can even keep a stash in the freezer to pull out a few at a time

if you have cookie or snowball emergency. :)

No-Bake Coconut Orange Snowballs, Makes approximately 5 dozen

Ingredients

1 box vanilla wafers, crushed

1/2 c. (1 stick) butter, melted

1 lb. box powdered sugar

1 (6 oz.) can frozen orange juice, thawed

1 tsp. vanilla

1 c. chopped pecans

8 oz. pkg. shredded coconut

Pulse vanilla wafers into fine crumbs in food processor.

In a large bowl, add sugar and chopped nuts to wafers, stirring together to combine.

Add melted butter, vanilla, and thawed orange juice concentrate and mix together. (Mixture will be sticky.)

Scoop out by large tablespoons and roll into bite size balls.

Roll balls in coconut. Keep refrigerated.

Ingredients

  • 12 oz. box vanilla wafers crushed
  • 1/2 c. 1 stick butter, melted
  • 1 lb. box powdered sugar 3 ¾ cups
  • 1 6 oz. can frozen orange juice concentrate, thawed
  • 1 tsp. vanilla
  • 1 c. chopped pecans
  • 8 oz. pkg. shredded coconut there will be some left over

Instructions

  • Pulse vanilla wafers into fine crumbs in food processor.
  • In a large bowl, add sugar and chopped nuts to wafers, stirring together to combine.
  • Add melted butter, vanilla and thawed orange juice concentrate and mix together. Mixture will be sticky.

  • Roll balls in coconut. Keep refrigerated.

    no bake works well for me, like no bake bakery cakes, cookies and candies! I have been to busy to fire up the oven, I keep saying tomorrow tomorrow tomorrow, I could be auditioning for annie!
