A Virtual Picnic, Acadia National Park & Cookbook Giveaway

I’m ending the week of feasting fun with a virtual picnic and inspiration from The Forest Feast Gatherings with a cookbook giveaway.

My picnic basket is packed for feasting in the forest at Jordan Pond in Acadia National Park. You can see highlights of our Coastal Maine Getaway in October, here.

We spent one too brief day in Acadia National Park. These photos were taken along the trail at Jordan Pond, a glacially carved valley, and Acadia’s deepest and clearest lake with depths of 150 feet.

It was overcast the day we were there but the scenery was green, lush, and beautiful around the 3.3 mile loop trail with view of the mountains, known as the the Bubbles, reflected in the pond.

The trail follows the shore of Jordan Pond providing iconic views of steep, glacially sculpted mountains.

The leaves were just beginning to turn when we were there in early October. I can only imagine how beautiful it is when the fall color peaks.

Let’s start with Ginger-Mint Lemonade to quench our thirst. . .

Add some chopped fresh ginger and mint to your lemonade, and blend to infuse the flavor, then strain.

Orzo-Black Bean Salad is an easy and delicious addition to your picnic basket!

The orzo is combined with black beans, red bell pepper, corn, cilantro, and red onion. If you’re not a cilantro fan, substitute parsley or omit. I omitted the red onion since we’re not raw onion fans. Our salad is packed in jars so it’s portable.

The dressing is a combination of lime, olive oil and chili powder. You can make the salad ahead.

Pesto-cucumber wraps are on the picnic menu. I recommend adding some chopped sundried tomatoes to go with the cream cheese and pesto filling!

 The trail path along the east side of Jordan Pond is an easy walk on a compact/dirt surface. A left on the trail, travels the west side first, mostly on a long section of wooden planks over a boggy area. The north end of the west side is rugged as it traverses uneven granite.

It’s not a hard trail to walk but I found myself having to concentrate and look down to stay on the crooked path of the plank walk.

    I now want to go to Arcadia national park! My favorite bit is the cranberry sauce. It’s raspberry jello, pineapple, fresh cranberries , nuts and orange juice and zest. So delicious that I don’t know why I only serve it at thanksgiving!

    My favorite part is gathering of friends and family. We celebrate the day before Thanksgiving and I call it Friendsgiving. It is quite a feast.

    I can’t stop scrolling through your pictures of Acadia. You really captured its grandeur and feeling of peace and solitude. The cloudy day has a beauty too, with the interesting sky reflected in the pond (which looks quite low!) and the dark mountains. I hope you go back someday to see the color! The photo of the rock-lined drain through the path has given me an idea for a problem in our yard!!
    I also made the orzo bean salad without the red onion and substituted basil for the cilantro. And I like the idea of the sundried tomatoes in the wrap too. We feasted on the wraps and I added roasted pimentos for color and a little excitement. I would love a bite of that fudge! It looks delicious! I know one of your readers will be so happy to win this book! It was a delight feasting with you this week.

    Mary, Lovely picnic. Pictures are beautiful and calming. My favorite dish is my Mom’s Sweet Potato Pie. My birthday is the last day of November so we celebrate at Thanksgiving. She is making an extra Sweet Potato Pie just for me. YUM!!!

    We loved Acadia when we visited, but didn’t take the trail at Jordan Pond. It sure does look intriguing though with the planks over bog (we hiked to the top of Bubbles), and I often comment that clouds make the fall colors more contrasting – a welcome sight as much as with the sun & blue skies. Our stay in Acadia sure would’ve been much better with a picnic like yours! A really nice opportunity for any reader to received this cookbook. Your culinary experiments this week were very inviting. Thanks for the chance, I’m obviously a subscriber, and I’m pinning. As for Thanksgiving, give me my mother’s bread dressing recipe or it’s not Thanksgiving! :)

    Acadia National Park is by far one of the loveliest national park. From its views to the trails and wild life. My favorite part of Thanksgiving feast is getting together with family and friends and the wonderful food we prepare for the occasion. Love left overs, turkey, stuffing and cranberry sauce sandwich!     Mary your pics are just beautiful. We are so lucky in this country to have those sites to see. My favorite of the Thanksgiving Feast is when we first gather at the table. When everyone is thankful that the food is before them and those who could come and join the feast are present. Giving Thanks for all that we have and are blessed with. That’s my favorite!

    I love Acadia. This whole blog series has been a feast for me! Lovely as usual, and so nice to be pop up free! My favorite part of Thanksgiving is our family potluck at the church hall where my grandmother attended church when she was living. From the graveyard, you can glimpse the Blue Ridge Mountains. Lots of food, family, and laughter!

    My Thanksgiving favorite is having the family together and being in a thankful mood. The food is always over the top and we always eat too much, but that’s part of the expectation. I think I really like having cranberry relish with the turkey since that’s the only time I have the two together. Desserts are also a favorite since I normally don’t indulge too much there. Thanks for sharing the beautiful photos from your trip!

    Thanksgiving always invokes memories of the feasts of the past. When I was a girl, there were so many aunts, uncles, and cousins celebrating at my grandmother and grandfather’s house. We all waited for someone to make the joke to pass Uncle Chuck the creamed onions because he didn’t like them. As my family grew up, we made our own traditions that we are now passing along to our grandchildren. I so enjoy making meals for my family and friends. That’s a way that I express my love for them. On the food side, I enjoy getting creative with side dishes. I try to make some new versions every year to go with my traditional turkey and stuffing.

    What beautiful photos of your lovely hike! The scenery looks very similar to some of our Oregon parks. Thanksgiving has always been my favorite holiday, I love to cook and prepare and gather everyone together! I have been making a delicious cranberry relish for years (the recipe came out of the magazine Family Circle almost 40 years ago when my children were small!) Our wedding anniversary is Nov 25th which always adds to the special-ness of Thanksgiving! Much to be thankful for this year! This looks like a beautiful cookbook!     Acadia is so beautiful, especially in the Fall when the leaves have peaked. Your photos are spectacular, it is like being along on your walk over the planks. Spending time with my family and inviting those without family to our celebration is our tradition. My Thanksgiving favorite(anytime favorite too) is the pumpkin pie or anything else with pumpkin in it! Second would be anything with cranberries.     My late beloved and I so enjoyed visiting the National Parks and hiking in them. We never got to Acadia, but your pics are swoon worthy.     Beautiful photos! I’m looking forward to making my fresh cranberry salad for Thanksgiving and Christmas. I crave it all year, but it only works with fresh cranberries available for a limited time. I bought the cookbook and love it so much that I would like to give a copy to my friend who is beginning her Vegan journey. I know some of the recipes will need adaptation to become Vegan, but I think she will like it anyway.

    My favorite part is stuffing. I don’t care what kind — cornbread, oyster, chestnut — I love it all. As far as I’m concerned, the rest of the menu is just items to be used to convey stuffing into my mouth.

    Thanks for taking us on a picnic to Acadia which is one of our favorite places. Watching the sunrise from Cadillac Mountain is breathtaking! We are going again in June when my hubby retires from teaching. Your pictures captured it so well! I was gifted the cookbook by my sister and am excited to plan a picnic or a forest feast. My mom’s dressing recipe will always be the star of our Thanksgiving feast.

    Wonderful pictures! Great photography! Thanks so much for sharing them with us! We don’t do a traditional Thanksgiving meal. Our 3 local daughters go to their husband’s family for the big meal. ( get them Christmas! ) In the evening, I have appetizers, soup and dessert for any of them and my adult grandchildren-whoever wants to come. Lot less work!

    I can’t think of a more beautiful place in the Park than Jordan Pond….We also had a brief day there and vow to go back…your picnic goodies look amazing!….Happy Thanksgiving to you and your family Mary!!

    Gorgeous photography! My favorite part of T’day dinner is the whipped sweet potato casserole. Unfortunately, no one else likes sweet potatoes in any form, so they’re no longer part of the feast.

    I have a very dear group of very diverse friends who get together monthly for adventures. Interesting enough is our focus on food and finding the freshest and best. These picnic ideas will be great for our kayak adventure on our local lake.I will also like on Facebook and would love to win this cookbook.     wow, now I know where our next vacation will be! Love national parks and could spend every vacation going to a different one. USA is beautiful!
    Would love a new cookbook. My girlfriends and I have a dinner every month and set a beautiful table.

    My grandmother’s cornbread dressing–she always said that oven drying some of the celery leaves and sprinkling them in made “all the difference!”
