Peach, Tomato and Corn Salad is a celebration of summer produce!
This fresh and flavorful summer salad makes the perfect side to accompany
your grilled main dish or for a light vegetarian lunch, celebrating
farm stand fruit and veggies in season at their peak of freshness!
We had some friends share their Mac’s Pride Peaches with us from McLeod Farms,
family owned and operated since 1916, located in McBee, South Carolina.
Although Georgia’s nickname is “The Peach State”, South Carolina
is the leader in peach production in the Southeast U.S.
These peaches were the ‘Big Red’ variety, available in mid-August,
and were sweet and juicy as well as big and red, as their name implies!
In addition to fresh and flavorful, this salad is sweet and savory, topped with salty feta cheese,
fresh basil and served with a Honey Vinaigrette. This salad is best eaten and served immediately,
since peaches begin to soften soon after cutting.
Cherokee Purple is our ‘go-to’ favorite summer variety/ heirloom tomato and already starting to dwindle
at our local farmers’ market, but use the tomatoes of your choice.
Toss the ingredients with the vinaigrette at the last-minute, since the tomatoes will macerate
and begin to release their juices from the vinegar.
For best flavor, grill your corn slightly under or al dente,
so the sweet kernels retain their crunch and texture when cut from the cob.
Ingredients
2 tomatoes, cut into wedges
Handful of heirloom cherry tomatoes
1 – 2 peaches, diced
1 cup fresh corn kernels (from 2 small ears or 1 large ear)
1/4 teaspoon kosher salt
1/4 cup Honey Vinaigrette
2 ounces feta cheese, crumbled (about 1/2 cup)
1/4 teaspoon black pepper
Basil leaves
Combine tomatoes, peaches, and corn in a medium bowl. Sprinkle with salt.
Drizzle with Honey Vinaigrette, and toss to coat. Divide salad among 4 plates, or serve on large platter.
Top with feta, and sprinkle with black pepper and basil leaves.
Honey Vinaigrette
Ingredients
1/2 cup canola or *olive oil
1/3 cup white balsamic vinegar
2 tablespoons honey
2 teaspoons minced red onion or shallot
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
Combine all ingredients in a mason jar. Cover with lid, and shake until blended. Use immediately, or chill until ready to use.
*Olive oil becomes cloudy and solidifies when refrigerated. If making vinaigrette ahead, remove from fridge to warm up to restore consistency before using.
Summer Peach, Tomato and Corn Salad with Honey Vinaigrette
Ingredients
- 2 tomatoes each cut into wedges

We grew Cherokee Purple tomatoes last year, and had great success. This year we grew a different variety and it was a mistake. Thanks for posting the vinaigrette recipe. I never purchase salad dressing, and I’ll try this one although I don’t have any white balsamic vinegar. I’ll pick some up today.

I don’t eat tomatoes, but this does look yummy. I’ve enjoyed mango salsa this summer, and don’t usually like mangos. Perhaps I should give this a try. Forwarding the recipe to my chef. ;-)
Looks so fresh and yummy! All the different kinds of tomatoes looks incredible. I’ll leave the onion out of the dressing tho.
A great flavor combination–and so healthy. It kills me that I can’t eat 🍅 anymore, but I still add them for others. Love the artful styling with the dish towel, forks, and the luscious produce. 🥗🌽🍽

What a taste of summer’s best! It is a beautiful presentation of color and what is better than juicy peaches, sun-ripened tomatoes, and sweet corn. Our peaches were not good this year, the late freeze got them!
