and I’m sharing 5 ways to use it and satisfy your sweet tooth!

🥒 Zucchini, despite being commonly used as a vegetable, is technically a fruit, derived from the flower of the zucchini plant.
🥒 Zucchini is a good source of potassium, even more so than bananas.
🥒 The best size for zucchini is generally 6-8 inches in length and 2 inches or less in diameter. Smaller zucchinis are often preferred because they tend to be more tender, flavorful, and have fewer seeds.

This post was very timely as I had just been thinking about grilling some sliced (lengthwise) zucchini with olive oil and spices. I know not as exciting as your recipes but a healthy alternative to some other side dishes. Thanks for sharing these yummy looking recipes!

Good morning, Mary! My beloved Mother always kept her moist zucchini bread available during the summer. She would freeze loaves to pull out during autumn and at Christmas. I am not crazy about zucchini, however I use it in some recipes. A great way to use it in brownies and bread is wonderful. I prefer avocado oil over walnut oil. It has a neutral flavor and a higher smoke point.

Zuke bread is my very favorite kind of homemade bread. Unfortunately we didn’t grow any this year (sad.) We have such a deer problem that we think the veg garden may have to be a thing of the past. Our HOA doesn’t let us build fences and Lord knows there is no natural predators to cull the number of starving deer with all the home building around here……..and no city involvement in keeping the numbers down – so it is really REALLY out of control here. However we have a lot of fabulous farm markets so I need to go get some zucchini and bake bake bake! I appreciate all your suggestions on bread keepers, etc. Thanks for always inspiring us, Mary!!!!!
