Bunny Ears Salad for Spring or Easter!

A fun and easy salad with a nod to Easter with “bunny ears” hiding in the salad greens!  Use ready-made palmiers as a short cut from the grocery store and enjoy with an easy recipe for Strawberry Balsamic Vinaigrette.

Since we’re eating like bunnies these days with

boating season {yay} aka bathing suit season {shudder}

on the horizon, tucking in a little Palmier among the greens

makes the salad eating a little less painful :)

No recipe for the salad, just a mixture of some mixed baby greens, blueberries, strawberries, and pecans. You can also add some blue cheese crumbles and substitute Sweet-and-Spicy Pecans, making your salad dining a little less bunny-like :)

I made a quick & easy Strawberry Vinaigrette dressing, using a recipe courtesy of Rachael Ray. I mixed up a cup to have on hand instead of 4 servings like the recipe and then made a slight adjustment for flavor.

Strawberry Balsamic Vinaigrette

~ 3 tablespoons strawberry jam

~1/4 cup balsamic vinegar

~3/4 cup extra-virgin olive oil

~1/2 teaspoon salt

~1/4 teaspoon pepper

Place jam in a medium bowl and whisk in vinegar then extra-virgin olive oil. Season the dressing with salt and pepper.

Store in a lidded jar in fridge and shake before serving.

I found palmiers at Target but I’ve also seen them at Trader Joe’s,

or you can make your own using Ina Garten’s recipe.

    Hi from the UK – I happened upon your blog while searching for china mugs! Not quite sure how that happened, but I was entranced. Some really inspirational ideas and a real tonic at this time of year. Having said that, we have a beautiful day here but freezing and heavy (for us) snow forecast for later.     That is adorable, only you could conjure a rabbit out of a salad. Once again we are twins, I made strawberry balsamic jam the other day. All the easier to pull a rabbit out my salad too!

    That’s a beautiful salad. I love to look at beautiful food! My problem is that I would still be hungry after eating that. :-( I guess if I had the added incentive of being seen in a bathing suit that I might muster up a little more willpower….maybe! :-)

    A friend had made ‘rose petal wine’ a few months ago which was delicious, but after a few weeks it turned into vinegar…which is also delicious. I was the recipient of a bottle of this “Rose Petal Vinegar” just yesterday and I think it would work great for the strawberry vinaigrette…Love the bunny ears peeking out of the salad!

    Mary, I saw this cut bunny ear salad pop up on the screen this morning while having coffee before I rushed out the door. I’ve been smiling as I thought about this during my day. Too cute! A green salad filled with fresh berries and a few nuts is delicious. Similar to what I served for my GC luncheon on Tuesday. Thanks for the tips on the dressing. Sounds perfect!
    As for a swim suit……….I don’t venture to that department anymore. LOL
