I have an easy and oh so good recipe for Cinnamon Roasted Almonds that’s healthy too! I’ve tweaked this recipe after making these almonds several times, adjusting the seasoning. These cinnamon almonds are sugar free, but you wouldn’t know it to taste them!
Almonds make a perfect snack since they also provide some nutrition. A handful of almonds gives you 6 grams of protein as well as providing fiber, calcium, potassium and heart-healthy fats that may help lower total cholesterol and decrease the risk of heart disease.
I also made a fun discovery: A lid of a regular mouth Ball jar holds one serving of almonds (1/4 cup). . . a convenient way to measure your serving, so you don’t mindlessly eat these almonds like popcorn. (easy to do, trust me ;)
Sugar Free Cinnamon Roasted Almonds
Makes 3 cups
Ingredients
3 cups raw unsalted almonds
1 egg white
1 teaspoon vanilla
1 1/2 teaspoons kosher salt
2 teaspoons cinnamon
4 tablespoons *Truvia® (Spoonable)
*Truvia is a sugar substitute zero-calorie natural sweetener comprised of erythritol, natural flavors and stevia leaf extract.
Directions
Preheat oven to 250 degrees. Combine Truvia, cinnamon, and salt, stirring together. Add almonds to medium bowl. In small bowl whisk together egg white and vanilla until frothy; pour over almonds and add cinnamon mixture, stirring well to coat almonds. Spread almonds on parchment lined baking sheet(s) and bake 1 hour, stirring every 15 minutes. Allow almonds to cool on baking sheet. Store in airtight container.
Not only do these almonds taste great, the kitchen smells wonderful while they’re roasting too!
I usually have a serving of cinnamon almonds with my morning coffee, thanks to these two who get me up at 5 am. . .
These almonds are also a great pick-me-up and satisfy your sweet tooth in the afternoon with a cup of tea or would make a great gift to share, especially in a Ball® Sharing Jar.

Trying this recipe with the almonds but I thought I might try with walnuts too…what ya think? We eat a lot of almonds because we make our own almond butter…we have been eating it so long now that we can’t eat regular peanut butter..it taste too sweet now..this is an easy recipe and thank you for sharing!!
