 Heirloom Tomato Carpaccio Salad~

Heirloom tomatoes~ sliced extremely thin~ with onion, capers, shaved parmesan, basil, olive oil, salt & pepper.

You can also add pine nuts, shaved fennel, or balsamic vinegar~ whatever ingredients you prefer.

I found a recipe from Food Network for

Heirloom Tomato Pie last year.

It is labor intensive, but Oh-So-Good and a favorite

for us when tomatoes runneth over!

Food Network’s recipe has a cornmeal crust which we love, but you could use a prepared pie crust to save prep time.

I usually make the crust a day in advance or the morning of, and wrap the pastry disk in plastic, refrigerating until I’m ready to make the pie.

I decided to make individual pies

or tarts with the recipe and

4.75-inch Wilton Tart/Quiche Pans.

To save time, I caramelize the onion a day or two in advance, for the filling. I also mix my other filling ingredients in advance and set aside in the refrigerator until I’m ready to assemble.

Food Network’s directions call for slicing tomatoes, tossing with salt and placing in a colander to drain for 30 minutes.

I have better luck placing tomato slices on layers of paper towels and leaving them to stand, occasionally replacing the paper towels for an 1 1/2 to 2 hours.

What I love about this tomato pie recipe besides the cornmeal crust, is that is not too mayonnaise-y, only 1/4 cup in the filling along with the onion, shredded mozzarella and manchego cheese, bread crumbs, and herbs~ chopped chives, parsley, and thyme.

    Beautiful presentation! I love ketchup, but won’t eat a tomato, lol!
    I make them for dh though. One he likes is baked in a casserole with feta and shrimp. Good sale on shrimp this week, I will have to make it!

    Oh how I love tomatoes — and heirlooms are the very best!! Your comment about the beauty contest is funny, but so true. When I look at tomatoes, if they look too perfect, I’m not interested because I feel like they won’t have a lot of flavor. Just like those kind in cellophane at the supermarket. :)

    The pictures of your food are just gorgeous and mouth watering! I’ve been wanting to make a tomato pie; I’ve eaten them before but never made one myself. I’ll have to check out this recipe; I’m so glad you shared it.

    Good morning, Mary! Just yesterday, Yvonne and I went to a TOMATO FARM!!!!!!!!!!!!!!!!!! Talk about your tomatoes runneth over!!!! AISLES of tomatoes!!!! I have red and yellow grape tomatoes and some beautiful slicing tomatoes. This week they will be on MY menu. Thanks so much for sharing these recipes and your beautiful table. Love the arrangement.     This looks so good, Mary. We found someone selling heirloom tomatoes as we were leaving for the lake Thursday. We had some of them for breakfast this morning, with fresh caught crappie from the lake. Yum :-).

    Ah, tomatoes….one of my most favorite foods…ever! So wonderful when they are just picked from the vines! Got some glorious heirloom ones yesterday afternoon at a little ‘flash market’ just a few miles from our house…also got some tiny mini grape ones which I will use today in a ‘tomato cocktail’…Tomatoes are summer’s richest rewards…but what is wonderful is that we can grow them year ’round! Beautiful photos, as usual, Mary…and I am saving this recipe to make soon… A few years ago I made a Ratatouille Quiche that was to die for…

    I love your idea of making little individual pies for everyone! I will have to look for those pans. My favorite heirlooms are the purple cherokees and a close second would be lemon boys. I have eaten so many tomatoes this summer I should turn into a tomato!

    Love your tomato centerpiece! It inspired a vegetable centerpiece I recently did for a summer party, the guests had a fit over the fresh veggies instead of flowers. Can’t wait to try the individual tomato tarts, they look amazing!
