I have an easy and fun Halloween treat for little ghouls and goblins, Oreo Surprise-Inside Cupcakes!
I used a doctored cake mix for quick & easy spelling to whip up a batch of these cupcakes, along with a package of Halloween Oreos.
HomeGoods is a short broom ride away, where I found this Meri Meri Happy Halloween Cupcake Kit for $5.99 recently. I always check out the baking section and their seasonal goodies when I’m there and this cupcake kit made me cackle with glee. <|:>)
The packaging is like a spooky doll house that my inner 5-year-old couldn’t resist playing with. . .
You can use your favorite cupcake recipe or cake mix to whip up a batch of these Oreo Surprise Inside Cupcakes. I used a Pillsbury Moist Supreme Devil’s Food Cake Mix that I doctored. To doctor any cake mix, substitute buttermilk for the water, 4 eggs instead of 3, and the same amount of oil called for in the mix. Follow the box directions for mixing and baking.
Place your cupcake wrappers in your pan. Fill each of the lined cupcake wells 1/3 of the way full with the batter. Place one Oreo on top of your batter in the middle of each well, and top with more batter until 2/3 of the way full. Alternatively, you could place your Oreo in the bottom of each well and bury it with batter.
Follow the directions for baking on the back of the box and according to your oven until cupcakes test done and a toothpick inserted into the center of the cupcake comes out clean. My cupcakes baked in about 15 minutes.
Allow cupcakes to cool in pan 5 minutes before removing to a wire rack to finish cooling completely.
Add your favorite frosting and sprinkles. This witch likes Pillsbury cream cheese frosting, but if the idea of canned frosting makes your black teeth ache, use your favorite frosting recipe. You can find a 5 star-rated Chocolate Frosting here, or a 5 star-rated Cream Cheese Frosting here.
You could use any variety of Oreo and cake mix for any holiday for surprise inside cupcakes.
How much fun! I love the little display Halloween house. I’ll see if our Homegoods has the Halloween cupcake kit. It would be the perfect backdrop for a project I’m working on! :)

I’ll go out and buy the ingredients and they’ll be ready for my little grands. I bought each of the families some of those Halloween Oreos, but didn’t get myself any. I’ll be heading to Target today before they fly out of the store, and before I fly out to Ohio!

For example, I just shared this post with my sweet tooth teenage son and we both went shopping together for the ingredients. Looking forward to baking with him this afternoon! This time with him his senior year is so precious:). Also, last week I made the Rice Krispy treat Jack-o-lanterns with my 8 yr-old and his friend during a play date. I went next door to my new neighbor for food coloring and we wound up planning our spring bulb plantings together! Then when my son’s friend’s mom came to pick him up, she came in to see the treats and commented on how pretty my back porch looked, so we made plans to spend an afternoon there. I look forward to seeing the next seasonal project!

Thanks Paula! The buttermilk makes the cupcakes moist and taste homemade! The science behind it being that the acid helps tenderize the gluten in batter, same as adding sour cream when baking but without the fat. The cookies don’t get soft since the cupcakes bake in about 15 minutes. Hope you have a beautiful weekend! :)
