This is a keeper recipe, adapted from Martina McBride’s cookbook,

I made this soup several weeks ago, froze half and pulled out the second half to enjoy this week. I made just a couple of changes, one of which was using my ‘go to’ time saver: a rotisserie chicken from the grocery store, ‘spit-fired around the cluck’ ;)

Creamy Chicken Tortilla Soup using rotisserie chicken | ©homeiswheretheboatis.net #soup #recipes

I like to use a rotisserie chickens for quick salads and soups. It’s also an easy and affordable way to make homemade chicken stock, using something that you usually throw away!

Chicken stock recipe | ©homeiswheretheboatis.net #soup #recipes

Add the chicken carcass to a Dutch oven or stock pot with some veggies, additional seasoning and water. After an hour or so of simmering on the stove you’ll have a fragrant and flavorful chicken stock that’s ready to use or freeze for later. You take advantage of the seasoning and flavor from the roasted chicken, while controlling the sodium in your homemade stock, better than store-bought!

You’ll need 4 cups of shredded cooked chicken for this soup; I used both white and dark meat from the rotisserie chicken but feel free to use only chicken breasts if you prefer. The other change I made was subbing evaporated milk for regular milk and the cream called for in the soup. I like evaporated milk as it’s a pantry ingredient and ideal for our non-milk drinking household. It delivers thickening power and creaminess to soups/chowders, mac and cheese, etc. without the calories and fat of heavy cream. It can also take the heat and won’t break or curdle like milk often does in soup.

Masa Harina in creamy chicken tortilla soup | ©homeiswheretheboatis.net #soup #recipes

You’ll also need some Masa Harina. If you’re not familiar with Masa Harina, it’s a Mexican corn flour that’s naturally gluten free, used for making tortillas and tamales. You can find it on the international foods aisle at most grocery stores with other Mexican and Latin American ingredients. It’s often added to chili to thicken it and adds a subtle corn flavor.

In addition to masa and chicken, you’ll also need:

~  4 cups chicken stock

~ Fresh ingredients: Yellow onion, jalapeño, (seeded and chopped), garlic cloves + a tablespoon of oil

~ Seasoning: chili powder, ground cumin, paprika, salt & pepper

~ Canned ingredients: (2) cans tomatoes with diced green chiles (such as Rotel); black beans; pinto beans; evaporated milk

~ 1 cup corn; frozen, fresh or canned (I used Trader Joe’s frozen fire roasted corn)

~ Dairy: Sour Cream

To serve, add your favorite tortilla soup garnishes like shredded cheese, sour cream, diced avocado, sliced jalapeño, cilantro, green onion, lime wedges, corn tortilla chips and / or hot sauce .

Enjoy!

  • 1/3 cup sour cream
  • Optional Garnishes: shredded cheese, sour cream, diced avocado, cilantro, diced green onions, lime wedges, corn tortilla chips, hot sauce

  • Heat the oil in a large Dutch oven over medium-high. Add the onion and jalapeno; cook 5 minutes. Add the garlic; cook 30 seconds, stirring constantly.

  • Stir in cooked chicken, black beans, pinto beans, and corn. Reduce the heat to low.

Notes

Substitute finely ground corn tortillas for masa to give the soup the same flavor, using a food processor to grind them up really fine.

I love soup! I have never added the masa harina before! I have some in my pantry and I think I will experiment with it soon! Thank you for sharing! 🌷🌹🌺🌸🪴Weather is going to rain all day in zone 6 B😞

This soup sounds wonderful, Mary. I’m like you and love using the carcass of the rotisserie chicken for making broth. I like your idea of using evaporated milk in the soup. I removed another Martina recipe you shared of the cabbage salad which was so tasty. Thanks for sharing another wonderful recipe!

Sounds delish, I’m looking out at a snowy white garden, been beasty cold the last few days and a hearty soup fits the bill. I never use cream in soups, I think your idea of evaporated milk sounds great, a nice addition. Wonderful photos, only thing lacking here is 24 hour delivery.

Awww, my fave soup. Can I substitute something for the Masa? I hesitate to buy a whole bag for 1/3 cup. There is only me to eat it. Thanks

Hi Kathy, You can use ground corn tortillas instead of masa to give the soup the same flavor. Just use a food processor to grind them up really fine.

I suspect the Masa Harina is the missing link in a few of my recipes, and I’m definitely going to do some experimenting. Soup is one of my favorite go-to lunches for chilly days, and Mexican anything is always at the top of my list.

I really like the idea of a pantry staple to replace heavy cream from a practical standpoint. Another fabulous element to test in my recipes.

    Stay toasty!

This looks delicious…I love tortilla soup, especially Chuy’s. This looks similar to theirs. I’m pinning it so I can make it this weekend. Thanks for posting, Mary!

    Love her recipes and book!
Tortilla Soup is a favorite and Costco roasted chicken is a quick but
Delicious alternative indeed. Matter of fact it’s going in crock pot
    For White Chile dinner.
It’s raining here in So. California also. Soup weather!

Looks yummy! I had tortilla soup for dinner.

Such a smart idea to use the carcass from a rotisserie chicken for the stock! I love the idea of having a batch in the freezer too, such a great help when there’s no time or energy to cook dinner. I just stocked up on evaporated milk, I want to start using it much more for cooking, thanks for the tips Mary, your soup is beautiful with the rainbow of colors!

Hmmmm, good! I love soup and especially tortilla soup. I have a good recipe, but will compare mine to this. I know I don’t use evaporated milk or the masa herina ( or maybe the ground corn tortillas) so this sounds like a try. We often buy a rotisserie chicken from Sam’s, but I haven’t made broth from the carcass, dah ! Will do so from now on! Thank you Mary! OLE’!!
