Mary, this potato salad recipe looks scrumptious. I can’t wait to try it. I’m always looking for lighter side dishes in the Summer. This one looks perfect!
Love the patriotic potatoes!! But alas, I’m a mayo girl, so may go with the colorful potatoes, but have to have the mayo and one boiled egg for every potato! ha. LOVING the lake and the rides on the pontoon. It is truly addicting!! Wish I could live here!! Yes, God bless all military current and past ~ we’re grateful for their efforts and sacrifices~ Let Freedom Ring!
P.S. Wanted to tell everyone the Dollar Tree Store has really cute red, white or blue star shaped plastic containers, (no lids). I bought 2 of each to use as great 4th of July “plates”. They are 1 1/4″ deep so they should work really well at holding the food in place as guests move and mingle about, Happy 4th everyone!

Can this be made ahead of time without sacrificing freshness?
Hi Pat, Yes and you can stir in or garnish with some additional fresh herbs or more dressing right before serving. Happy 4th!
