Patriotic Potato Salad and Independence Day Recipe Round-Up!

 Patriotic Potato Salad is a quick and easy side for your 4th of July menu and backyard BBQ! Feel free to pass the potatoes since this potato salad is light and healthy~ dressed with fresh herbs, olive oil and vinegar and liberated from mayonnaise and eggs!

This patriotic potato salad starts with red, white and blue (or purple) potatoes. I found a medley of mini one-bite potatoes, bagged up ready to go at The Fresh Market but I’ve also seen them at my local grocery store. I used two 24 oz. bags of potatoes but feel free ;) to adjust the quantities to your taste!

Patriotic Potato Salad, recipe adapted from Food Network Magazine

Ingredients

 1 lb. blue potatoes, chopped

1 lb. white potatoes, chopped

1/2 lb. red potatoes, chopped

1 1/2 cups halved cherry or grape tomatoes

2 cloves garlic

4 tablespoons white wine vinegar

4 tablespoons chopped fresh herbs of choice~ parsley, basil, dill, thyme or combination

2 tablespoons chopped scallions, or more to taste

1/4 cup olive oil

Salt & Pepper

Add potatoes to pot and cover with cold water. Add 2 tablespoons white wine vinegar, 2 cloves of garlic and salt (tablespoon of salt per quart of water). The vinegar flavors the potatoes and the acid helps the blue/purple potatoes retain their color while cooking.

Bring to a boil, then simmer until the potatoes are tender, about 15 minutes. Drain and discard garlic. While potatoes are still hot, add the dressing and season with additional salt and pepper to taste. Stir in tomatoes and scallions. Chill until ready to serve or enjoy warm.

To make dressing: To a jar, add 2 tablespoons white wine vinegar, 1/4 cup olive oil, salt, pepper and herbs, shaking to combine. Pour over potatoes while hot for maximum flavor.

    I’ve never liked traditional potato salad Mary, but this lighter version with vinaigrette and red white and blue potatoes looks irresistible and oh so 4th festive!! 🇺🇸

    Love the patriotic potatoes!! But alas, I’m a mayo girl, so may go with the colorful potatoes, but have to have the mayo and one boiled egg for every potato! ha. LOVING the lake and the rides on the pontoon. It is truly addicting!! Wish I could live here!! Yes, God bless all military current and past ~ we’re grateful for their efforts and sacrifices~ Let Freedom Ring!

    P.S. Wanted to tell everyone the Dollar Tree Store has really cute red, white or blue star shaped plastic containers, (no lids). I bought 2 of each to use as great 4th of July “plates”. They are 1 1/4″ deep so they should work really well at holding the food in place as guests move and mingle about, Happy 4th everyone!

      Hi Pat, Yes and you can stir in or garnish with some additional fresh herbs or more dressing right before serving. Happy 4th!
