 For the Easter “grass” in the cupcake baskets,

I tinted shredded coconut with food coloring.

You can make your grass the color of your choice or multi-color as in Mini Easter Basket Cakes.

Tinting shredded coconut is quick and easy; there are a couple of ways you can do it.

The first way is by placing your coconut in a plastic bag or bowl,

adding a couple of drops liquid food color, and mixing or massaging your plastic bag

until you have your desired color. Let your coconut dry a little on a paper towel.

Your can tint your coconut in advance and store it in zip top bag in the refrigerator

until you’re ready to assemble your cupcakes.

I used a 14 oz. bag of coconut which was more than enough for 24 cupcakes.

I tinted my coconut by adding a couple of teaspoons of water in a jar,

then adding some gel food coloring, giving the jar a vigorous shake to break up the gel,

mixing it with the water until blended. Add the coconut to the jar with the food coloring

and shake it vigorously until it your coconut is tinted as desired.

If your coconut “grass” is too light, add more diluted food coloring to your jar

and shake again until you achieve your desired color, working in batches.

Place the tinted coconut on a paper towel, blotting to absorb the excess moisture.

Allow your coconut to dry out a little, to lose some of the water that you added,

covering with a paper towel on your kitchen counter.

If you’re in a hurry, you can place your tinted coconut on parchment paper

in a 200 degree oven for 20 minutes or so, giving it a stir occasionally.

For edible basket handles, I used Sour Punch Straws.

I found a rainbow package of Sour Punch Straws at Target.

Bake your cupcakes using your favorite recipe or box mix.

I use a favorite shortcut and two-ingredient cupcake recipe for quick and easy baking.

Less time mixing and baking = more time for decorating!

Use your favorite frosting recipe or canned frosting.

You can tint your frosting with food coloring to match your grass if desired.

I piped a little frosting on the bottom of the foiled wrapped bunny to anchor it to the cupcake.

Lindt Easter Milk Chocolate Mini Gold Bunnies, Lambs, Ducklings and Chicks come in a pack of 5 for around $4.99.

I found mine at Target.

Pipe your frosting around your foil wrapped bunny or chick and attach your coconut “grass”.

Bend your candy straw to form a basket handle,

anchoring it in the sides of your cupcake. If you can’t find Sour Punch Straws,

you can use licorice, cutting it if necessary for the basket handles.

Add the candy eggs of your choice, tucking them in the basket.

I used speckled egg jelly beans.

    So cute! I found everything just as you described at Target and the Lindt bunnies were on sale! My granddaughter and I are making these for Easter dinner. piping green frosting instead of coconut for the picky eaters. I really appreciate the pictures of each item when you do tutorials.
