Can you guess what the secret ingredient is? Would you be surprised to hear that it’s mayonnaise?

Before you run away screaming ;) here’s a reminder of what mayonnaise is:

An emulsification of eggs and oil, with a touch of lemon for acidity~

I made one change to the recipe, adding some butterscotch chips to marry

with the dark chocolate morsels I already had.

I love the combination of the sweet butterscotch chips paired with the dark chocolate chips,

but feel free to use the chips of your choice in these cookies.

With their chewy centers and crunchy bottoms, these cookies did not disappoint!

This recipe makes about 24 cookies using a 1.5 Tbsp / 39mm cookie scoop,

which makes it easy to portion out your dough for uniform baking.

The dark chocolate morsels are a little larger than

standard chocolate chips so they stay gooey and melty

a little longer when the cookies are warm from the oven.

Chewy Butterscotch Chocolate Chip Cookies with a Secret Ingredient

An easy to make chocolate chip cookie recipe that satisfies the chewy cookie lover and delivers on flavor, thanks to a secret ingredient.

Cook Time15 mins
Course: Dessert
Cuisine: American
Keyword: chocolate chip, cookie, easy, mayonnaise
Servings: 24

Equipment

  • oven

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1/2 teaspoon baking powder
  • pinch salt
  • 3/4 cup Duke's Mayonnaise
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 large egg
  • 2 teaspoons vanilla
  • 1 cup bittersweet or dark chocolate chips
  • 1/2 cup butterscotch chips

Instructions

  • Preheat oven to 350 degrees. Line two rimmed baking sheets with parchment paper.
  • Stir together flour, cornstarch, baking soda and salt in small bowl.
  • In a medium bowl, whisk together mayonnaise, sugars, egg and vanilla until mixture is smooth. Add the flour mixture and stir until combined. Fold in chocolate and butterscotch chips.
  • Using a small cookie scoop, scoop the dough into 24 balls or roll into 24 (1 ½ inch) balls. Place dough balls 2 inches apart on prepared baking sheets.
  • Bake at 350 for 12 – 14 minutes, until bottoms and edges of cookies are lightly golden. Let cool on baking sheets for 5 minutes before removing to wire racks to cool completely.
  • Store cookies in an air tight container.

Notes

To measure the flour, spoon it into your measuring cup and level it off with the flat edge of a knife. Don’t shake or scoop directly from the flour bag which will lead to too much flour in your cookies.

Mary, I love chocolate chip cookies and especially if they are nice and gooey. My beloved mom often used mayo in a different way, she was definitely ahead of her time when it came to her baking skills. Thanks from sharing and Happy Friday!

Hi Mary – When your original post about the Duke’s Mayonnaise Cook Book appeared with samples of its recipes, I didn’t want to take a chance on not winning. I ordered it immediately (through your Amazon link) and spent yesterday placing post-its on specific recipes. I cannot wait to try them! I love it when you include sources in your posts. Thanks for all of your inspirational ideas. Nancy

Thanks for the great idea to add butterscotch chips along with the chocolate chips. I’ve added craisins to white choc chips and M&M’s but never this combo. Can’t wait to try it!

The cookie monster that lives here would go through these in short order. I’ll need to make him a batch for his birthday. Happy Friday, Mary!

As a huge fan of butterscotch, I approve! It’s not often that people post recipes with butterscotch so this is a a great treat. I’ve never tried mayonnaise in a cookie recipe so I’m eager to sample!

  16. August 21, 2020 at 6:22 pm

Well… who knew mayo could be used in different ways! These look fabulous!

  17. August 22, 2020 at 8:07 am

Love that combo, I made hello dollies this week in dire need of comfort food. I could never make these cookies, I have such a sugar compulsion I can’t rest until I eat 10-15 at a pop, several times a day… Picture perfect and mouthwatering, a deadly combination.

Boy, these look yummy. I just may have to try and find Duke’s in our stores and see if it is as good as my favorite Hellman’s. You are a temptress Miss Mary! Hehe. I noticed you have changed your header with lovely pictures of early fall. Our sweet pup looks darling with her floral fall headband and the sunset is stunning. I love Cinderella pumpkins and know they will be coming on soon, but I am holding on to Summer. Headed to the beach to sit and stare at our beautiful blue water and may have to jump some waves! Lol

The cookbook arrived on Sunday at about 4:00 pm. I have read at least 1/2 of book and discovered some new ways with old recipes. Today the cookies are on the menu- if the temperature doesn’t climb too high (forecast is for 92).Think I could bake them on the black top?
Again, I wish to thank you for my gift.
    Sincerely, Carolyn K.
