Ingredients:

*1 1/4 cups Lemon Cake Mix (I used Betty Crocker Super Moist Lemon Cake Mix)

*You’ll have enough cake mix leftover for a second batch of scones.

1 1/4 cups all-purpose flour

8 Tbsp. cold butter, cut into pieces

2/3 cup milk or half and half

1 cup fresh blueberries (or frozen, do not thaw)

1 large lemon, zested; juice reserved for glaze

Lemon Glaze

1 – 2  tablespoons fresh lemon juice

1 cup powdered sugar

Method

Preheat oven to 400°F. Line a baking sheet with parchment paper.

Combine cake mix and flour in bowl of food processor; pulse a few times to combine.

Add cubed cold butter to processor and pulse until mixture resemble pea-sized crumbs.

(If you don’t have a food processor, cut in butter with a pastry cutter or two knives.)

Add mixture to medium bowl, mix in blueberries.

Add lemon zest to milk; add to flour mixture, stirring until mixture holds together.

Knead dough with well-floured hands to form a ball.

Place dough on prepared baking sheet and gently press down to form an 8- or 9-inch domed circle.

Cut circle into 8 wedges with a greased knife or bench scraper.

Chill scones for at least 15 minutes up to an hour in the refrigerator before baking.

Chilling the scone dough after forming helps keep the butter cold that creates that flaky texture.

When ready to bake, place 2 inches apart on parchment paper.

Bake 20 to 25 minutes or until edges are starting to brown and centers are set.

Transfer scones to wire rack to cool completely. When cool, drizzle with glaze.

To make glaze:

Mix sugar with lemon juice, adding 1 tablespoon of juice at a time until reaching desired consistency.

Drizzle glaze over top of cooled scones. Allow glaze to set before serving.

For a thicker glaze, use more confectioner’s sugar.

Bake from frozen option:

Flash freeze unbaked scones, then wrap individually and bake them one or two at a time as needed.

 Add a few minutes to your baking time when baking from frozen.

Bake frozen scones within 1 month for best flavor and rise.

Notes

  • If you don’t have a food processor, cut in butter with pastry blender or two knives.
  • You can freeze scones unbaked and pull out one or two at a time to bake as needed. Flash freeze unbaked scones, then wrap well in plastic wrap and place in freezer bag. Bake from frozen as directed, adding a few minutes extra to your baking time. Bake frozen scones within 1 month for best flavor and rise.
  • Leftover scones will keep at room temperature in an airtight container for 2 days or in the refrigerator for 5 days.
  • You'll have enough cake mix leftover for a second batch of 8 scones.
  • When zesting any citrus, only use the colored peel, avoiding the white pith underneath, which is bitter.

Behind the scenes:

You probably noticed that I took some of my photos on the porch.

Photographing a table outdoors is not without its challenges!

The sun’s too harsh and bright or it’s too cloudy;

 the heat and humidity causes condensation on stemware

and camera lenses to fog;

not to mention tree pollen, the threat of rain or wind. . .

There were 17 mph wind gusts when I had my window to photograph

my table which ultimately sent me scurrying to the porch

 with my flowers to finish photographing.

I scrambled to find clips for my tablecloth to help weight it down and keep it from flying around

in the wind. . . I think I need to invest in some proper tablecloth weights. :)

    Oh, the adventures of a tablescape photographer! You are quite adaptable!
    Your water view is so lovely and very inviting. I love the happy colors and each plate, silverware, teapot, cups and saucers, and chargers, speak to me.
    I must say also that those scones look so delicious I am going to think about them all day! I sure wish I had one now!
    Your floral arrangement is beautiful and the Laura Ashley cloth is so perfect! You are so blessed to have the beautiful corn flower field view! That would make a lovely framed picture.

    Mary, I have always loved the blue/white and yellow combination. The cheery Laura Ashley tablecloth with the floral print squares is the perfect foundation for lakeside dining. I felt your pain trying to photograph with wind, but I so love when you set a table lakeside. The arrangement of grocery store flowers is lovely in the vintage ironstone pitcher. The flowers and tablecloth are a gorgeous pairing, meant for each other. The teapot is charming serving up Harney and Sons Mother’s Day Tea.

    Would you please pass me a Lemon-Blueberry scone? They look delicious and what’s not to love with a cake mix hack?!

      Mary, this is gorgeous! The napkins, tablecloth and teapot are such a pretty colorway with the blue & white. I really love lemon yellow, whether it’s a food flavor or color. It’s a color that works for me. The tea sounds like one I would love with it’s flavors, nice for late afternoon or evening (I also need caffeine earlier in my day). The flowers are the happy accessory to the tabletop. I love how you can pick the bachelor’s buttons from the field.
      Definitely get yourself some weights. However, we’d never even know the problems you had, had you not pointed them out. Your timing was obviously just right for the photos you dis get. The lakeside makes such a beautiful setting. I know you likely miss the shade the tree provided, but opportunity is knocking!

    Your table and lake view are so cheery for a Mother’s Day tea, Mary. I wondered about that Harney and Sons tea, but didn’t order any. Your scones look lemony luscious, and that tart server is so perfect for serving. I do think of my own dear mom each and every day and miss talking to her and asking her things.     This is so lovely Mary, I never would have guessed that you were dealing with wind issues! The pretty blue, yellow and white brings instant smiles and what a beautiful spot to enjoy a cuppa lakeside looking over the water. The mixed pattern flatware set is really nice and I love the way you elevated the teapot on a pedestal. The cake mix hack scones sound delightful!
