I’m celebrating the

Red, White, and Blueberry!

I ran across a recipe for Blueberry Salsa in Southern Living that I had filed away~ there are two versions actually, one with onion and one without.

I used red onion in ours :)

Fun for serving with Red, White, and Blue Tortilla Chips from

Trader Joe’s for a little Patriotic Noshing

on Independence Day~

Southern Living’s recipe called for 1/4 cup lemon juice~

I substituted lime juice to pair with the cilantro and jalapeño.

Ingredients

~2 cups chopped fresh blueberries 
~1 cup whole fresh blueberries 
~1/4 cup fresh lemon juice (I used lime)
~3 tablespoons chopped fresh cilantro
~2 seeded and minced jalapeño peppers
~1/3 cup diced red bell pepper 
~1/4 cup chopped onion 
~1/2 teaspoon kosher salt

Preparation

Coarsely chop 2 cups fresh blueberries.

Stir together with whole blueberries and add rest of ingredients.

Cover and chill until ready to serve.

I prefer this salsa freshly mixed where the flavors are distinct but complement each other. My husband prefers it after several hours when the flavors meld.

Whatever floats your boat!

Blueberries give this medley a sweet flavor, while the jalapeño pepper, bell pepper and cilantro provide a savory bite.

 To reduce the fireworks in your mouth :) you may want to add only one seeded minced jalapeño, depending on how hot you like your salsa!

This is fresh, flavorful, colorful, AND healthy~ a winner!

Definitely a recipe to try if you enjoy salsa and look forward to blueberry season!

This salsa is also recommended to serve with Blueberry-Rum Marinated Pork Tenderloin which I’m anxious to try~

    Hi Mary, I’m so happy to be the winner of your basket giveaway! I have been thinking of many places to go where I can use it–canoeing nearby, the beach, and up to the mountains where we go in August! I can’t wait to see it. I’m planning my post now! Thank you so much!
    Oh, I almost forgot to mention in all the excitement, this blueberry salsa recipe sounds yummy and unusual. I’ll take mine without the onions, as I am very allergic to them. I always make two versions of things like this–putting some aside for me and then adding the onions to the remainder for my family and guests. I think the lime juice must be better with the cilantro and peppers, too.

    I don’t think I’ve ever tasted anything made with blueberries that wasn’t delicious! This salsa can’t go wrong! Will definitely give it a try. This was one of my favorite giveaways and I am so happy for Linda!

    Yummy!!! :D Lovely recipe and setting! I have not tried this one, but I will because we love blueberries, and I have tons of them on hand! I will let you know what my family thinks about it. I will serve it as an appetizer this evening.

    Mary, the blueberry salsa sounds interesting. I make mine with black beans, so this will be a new adventure. ;-)

    I made my first visit to Trader Joes when I made a run to Portland last week. It was right next door to Whole Foods so it was a two for one stop. Enjoy your fourth on the lake.

    I don’t think I’ve ever heard of blueberry salsa but I”m willing to give it a try. I just made mango salsa the other night and had it with fish, but never hear of blueberry. Love how patriotic is!
