Red, White, and Blueberry!
I ran across a recipe for Blueberry Salsa in Southern Living that I had filed away~ there are two versions actually, one with onionand one without.
I used red onion in ours :)
Fun for serving with Red, White, and Blue Tortilla Chips from
Trader Joe’s for a little Patriotic Noshing
Southern Living’s recipe called for 1/4 cup lemon juice~
I substituted lime juice to pair with the cilantro and jalapeño.
~2 cups chopped fresh blueberries ~1 cup whole fresh blueberries ~1/4 cup fresh lemon juice (I used lime) ~3 tablespoons chopped fresh cilantro ~2 seeded and minced jalapeño peppers ~1/3 cup diced red bell pepper ~1/4 cup chopped onion ~1/2 teaspoon kosher salt
Coarsely chop 2 cups fresh blueberries.
Stir together with whole blueberries and add rest of ingredients.
Cover and chill until ready to serve.
I prefer this salsa freshly mixed where the flavors are distinct but complement each other. My husband prefers it after several hours when the flavors meld.

Blueberries give this medley a sweet flavor, while the jalapeño pepper, bell pepper and cilantro provide a savory bite.
To reduce the fireworks in your mouth :) you may want to add only one seeded minced jalapeño, depending on how hot you like your salsa!
This is fresh, flavorful, colorful, AND healthy~ a winner!
