I loved Erin Gleeson’s first cookbook, The Forest Feast, and was thrilled when I saw she had a new cookbook this fall geared towards entertaining. You can find The Novel Bakers review of The Forest Feast, here.

My inner dishaholic was wowed by the endpapers in the book and inspired to do some dish gathering to go along with the feasting in this book. ;)

I loved the floral/edible table runner for entertaining! Forage for your greenery from your shrubs and trees or pick up some greenery from the florist or grocery store.

I cut some green oak leaves, along with some purple-tinted loropetalum from the shrubs, and the last of the hydrangeas.

Our maple tree peaked this past week and its crimson leaves are joining white pumpkins for their last hurrah at the table.

Pomegranates, artichokes, apples and pears from the grocery store add some color and texture for an edible runner.

I found a 33-piece set of Robert Sprays by Wedgwood for $19 at antique mall a month ago.

Some of the pieces had a few chips and some crazing but there were 7 dinner plates in good shape so it’s making its debut at the table to pair with this floral and edible runner.

I tucked the leaves in among the hydrangeas and pumpkins and added some votives to light along the length of the table.

We’re fans of butternut squash as well as hummus so this mash up of Butternut Hummus sounded like a perfect fall appetizer for us.

Easy, oh so good, and much better than store-bought hummus!

My grocery store sells butternut squash already cubed which is a real time saver.  Toss your butternut squash with olive oil, salt and pepper and place on parchment lined baking sheet and roast at 425 degrees for 30 – 40 minutes, stirring occasionally or until fork-tender.

In the bowl of a food processor, combine your roasted butternut squash with:

1 (15 oz.) can of chickpeas, drained

1/4 cup olive oil

2 tablespoon tahini / sesame paste–> my addition

1 teaspoon paprika

1/4 teaspoon kosher salt

1 teaspoon garlic powder (or 3 cloves minced)

Juice from 1 lemon

Purée ingredients until smooth. I reserve some roasted butternut cubes to garnish top of hummus. Spoon into bowl and sprinkle with paprika and olive oil.

Serve with veggies or choice and/or tortilla or pita chips.

I picked up some rainbow carrots and Terra Real Vegetable Chips. These chips are healthier than regular pita or tortilla chips, colorful and tasty too.

I was wowed by the purple color and texture shade of cabbage when I was at the grocery store so I picked some up to line the tray.

Butternut Hummus

Fans of butternut squash and hummus will love this flavorful mash up in a delicious and healthy fall appetizer.

Equipment

  • food processor
  • oven

Ingredients

  • 1 1/4 pounds butternut squash peeled and 1-inch-diced
  • 1 15 oz. can of chickpeas, drained
  • 1/4 cup olive oil
  • 2 tablespoon tahini sesame paste
  • 1 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1 teaspoon garlic powder or 3 cloves minced
  • Juice from 1 lemon

Instructions

To roast butternut squash

  • You can find butternut squash already cubed in most grocery stores these days which is a real time saver. Toss your butternut squash with olive oil, kosher salt and pepper and place on baking sheet and roast at 400 degrees for 30 – 40 minutes, stirring occasionally or until fork-tender.

To make hummus

  • Reserve 1/4 cup of squash for garnish and transfer the rest to the bowl of a food processor fitted with the steel blade.
  • Add other ingredients to food processor and purée until smooth.
  • Spoon into bowl and sprinkle with paprika and drizzle with olive oil and garnish with reserved butternut cubes. Serve with veggies of choice and/or tortilla or pita chips.

I loved the idea of an Endive Bar for an easy self-serve appetizer!

I had a set of Just Desserts Square Bowls that I used for the fillings.

I used the recommended filling ingredients plus a few more including pancetta, a violation with a vegetarian cookbook :)

Roasted butternut squash cubes; crumbled blue or Gorgonzola cheese; ricotta cheese or other soft cheese, Boursin, or cream cheese;  cubed pancetta; chopped toasted walnuts or pecans; caramelized red onion; dried cranberries; fresh thyme and chives; seedless red grapes, halved; fig jam; salted sunflower seeds. Hummus, scallions, honey, and pomegranate seeds would be good too!

Have your guests fill their endive leaves their fillings of choice.

We like a combination of sweet + savory + creamy + crunchy

Sweet = fig jam, grapes, cranberries, pear

Savory = butternut, caramelized onion, pancetta

Creamy = ricotta, blue cheese, hummus

Crunchy = walnuts, sunflower seeds

    oh its so good to be back, to be jealous of everyones creativity and fun food and decor again! i am cracking up how similar we view things, i too wanted to share dishes like the front jacket, but i live by the sea and this was a forest book, i couldn’t see stacking up octopus, mermaids, seashells and starfish dishes when i really wanted to pull off i am deep in the forest feast mood ;-)

    I LOVE your runner! i did an edible one for our bookclub at a winery this summer, i think they are simply the best decoration a table can have… i envy all your props, leaves, poms, shades of home, it just magical pulling them all together. your shots are stunning, i could look at 1000s of pics like this and never ever tire, every angle is magical to me!

    the colors in your humus shot are over the top the fun, brilliant contrasts with mouthwatering delights! i am wild about purple meets fall~

    your endive bar is fabulous! i truly do love her cookbooks, they are beautiful, fresh, simple and pack a lot of punch. i snicker at your pancetta, on wednesday i share a little cocktail spread, i brought a taboo item but couldn’t get myself to mar the moment… your choices look fabulous, i would have had a feast!

    Mary, I LOVE your display of dishes — it must have been a huge project yet very enjoyable to gather them all together and organize them so carefully! I too was intrigued by the end papers in this lovely cookbook. The hummus does sound so delicious! The endive bar is such a clever idea. I’m especially drooling over your grape/ricotta/walnut combo and I’ll eat the fig jam on anything. They are all tempting. I think guests would love this idea. Looking forward to you next concoctions!     Mary! This is so incredibly appetizing – food AND dishes! Holy moly, can’t believe you found 33 pcs of the Wedgwood for $!9!! Lucky you, and I need to get down to your area for a trip with my sisters. I really like how you used labels on the graphic for your endive bar buffet square bowls – makes the id’ing for pinning that much better – thank you!

    Oh boy, I can see this book under the Christmas tree and an endive bar on the horizon! What a perfect time for the Novel Baker’s to review this Forest Feast Gatherings, just in time for the holiday stuffing season :) Your toppings for the endive bar are scrumptious Mary, and your edible runner is divine!     Oh Mary, I love your runner of edibles, flowers and leaves, and I’m swooning over the dishes that you found at the antique store for $19.00! Now they have a new home where they will be loved by you. The hummus sounds and looks beautiful, and I’d be violating the vegetarian rules, too, with the endive bar.     Mary, I was smitten with this book when the Novel Bakers first introduced us to it. You girls are AMAZING! I like the idea of the natural centerpiece and want to add some of these ideas to my Thanksgiving table. Love the endive cups filled with a choice of ingredients. I often make endive cups for my lunch. They make a perfect healthy, low cal meal.

    Mary, you brought TFFG to life, showing all the magic. I love your centerpiece with the foraged beauty from your neck of the woods, and the dishes…swoon. A sight that will enthrall any dish lover–and will convert non-dish people into collectors. Just beautiful! Your tree is in full glory, a blaze of fiery hues. And the presentation of the book itself, surrounded by dishes and bounty is a feast in itself. The endive bar looks inviting and is displayed with such flair, so enticing. I am tempted to try the hummus, as I became smitten with butternuts during our tour of the last FF book, and the dip has all the items on my dietary list (no nuts, ever again), and you have made it look scrumptious. The vibrant purple cabbage and colorful carrots and crisps are a gorgeous compliment to the dip. I will definitely add the tahini/sesame paste. It’s such fun to play with you and to come away inspired and happy. Being here lifts the heart and soul.I’m so looking forward to Wednesday to see what magic you’ve cooked up.

    I love this post so much because I love The Forest Feast! I’ve made every salad and dressing in there…..love it! And there’s plenty of eye candy: The photography is so pretty!

    I rarely find bargains unless it’s seasonal stuff at the end of a season!

    The endive appetizers look fantastic! I haven’t made them yet.
