You have to love a cookbook that starts out with a welcome cocktail!
This is one of several recipes in Home Made Winter by Yvette van Boven that has charming illustrations in lieu of written directions.
No measuring required, just ingredients
are all you need to mix this cocktail.
Mix your ingredients in equal parts, ginger ale (I used diet), cranberry juice and vodka.
I used frozen cranberries for mini ice cubes.
Shake your cranberry juice and vodka in a cocktail shaker with ice and pour in your glass, top off with vodka. Feel free to use a heavy or light hand with the vodka :)
Help yourself to some dessert!
The Sticky Chocolate Cake in Your Coffee Mug in 3 Minutes appealed to me for obvious reasons . . . microwave + 3 minutes = chocolate cake for one! Best of all, you only need pantry ingredients to satisfy your inner chocoholic.
Prep Time: 2 minutes
Cook Time: 3 minutes
Total Time: 5 minutes
Yield: 1 mug-sized cake
Ingredients
3 tbsp all-purpose flour
3 tbsp sugar
1 1/2 tbsp unsweetened cocoa powder
2 tsp vanilla sugar (If you don’t have vanilla sugar, use 2 teaspoons granulated sugar and 1 teaspoon vanilla extract)
1 egg
3 tbsp milk
3 tbsp sunflower oil (I used canola)
If you wish:
3 tbsp chocolate chips or grated chocolate
3 tbsp raisins
Sugar syrup, appelstroop (Dutch apple syrup), golden syrup, a dash of liqueur, or vanilla ice cream
Spray your mug with nonstick spray. Mix the dry ingredients in the coffee mug. Add the egg and whisk with a fork. Add the milk and oil and whisk some more.
Then stir in the chocolate chips or raisins, if desired. I added chocolate chips.
Place the mug in the microwave and “bake” the batter for 3 minutes on high. The cake may rise above the rim of the mug, I used an 8 ounce mug. Use a saucer under the mug as it “bakes” to catch any drips. Let it cool for a bit.
Add any syrup, dash of liqueur, or serve with vanilla ice cream. I used a generous amount of chocolate syrup to ‘frost’ the mug cake.
Dig in and enjoy!

Good easy cocktail! Not to shabby with the mug cake either! I too like the idea of a single serving.
The cocktail sounds wonderful and the cake so easy! I’ve made those microwave cakes and they are a great treat when in need of a yummy treat for one! xo

It was fun having this from scratch recipe for the one-serving cake in a cup…but, take it from someone with a sweet tooth…you can do the same thing with cake mix just mixed with water…if you’re desperate at 9 p.m., you know!

oh i had planned to make this too, but didn’t have time! for a 3 minute cake?! i had run out of days, but i did want to try this one, perhaps its best i never learn how to feed my addiction so easily. that drizzle of choc on choc is kinda like porn to me, you want to look, but you know you shouldn’t!

Funny…that vodka must be good! 😊I spotted a bottle of this at Sam,s club and mentioned how pretty those bottles are. My granddaughter brought me a couple of them, that her father in law had! They are so pretty!!

I am a cranberry and vodka person so what an easy drink. The cake is a fabulously dangerous little recipe.
I did a double take with the pear cake on the cover too – how stunning, but then to get to see yours from the top, it is even more gorgeous! That looks like a real show stopper. I love your doubling the butter! That was pretty funny. We were just talking about that – my newlywed daughter and I as they used Frank’s Hot Sauce – 1 1/2 C. instead of Frank’s Buffalo Sauce – 1/2 C. and couldn’t eat the sticky fingers – had to throw them out and their eyes were watering. She couldn’t believe I had ever made a mistake on a recipe! Ha ha ha!!
