With Mardi Gras a couple of weeks away, I found a recipe for Homemade Italian Giardiniera.
If you’re not familiar with Giardinera, (pronounced Jar-dih-NAIR-ah) it’s Italian and means ‘from the garden’. It’s a pickled vegetable medley that usually includes cauliflower, carrot, celery or fennel, and hot or sweet peppers. It’s generally used as a condiment on sandwiches or served on antipasto platters. You can make it mild or hot according to your taste and heat tolerance. In Chicago, it’s usually hot and enjoyed as a topping on Italian beef sandwiches. In the South, a milder version of giardiniera is used for the olive salad in the muffuletta sandwich in New Orleans.
You can find Giardinera in the grocery store near the olives or pickles, but it’s easy to make in advance. It’s brined overnight and then marinates for 48 hours. This recipe makes approximately 2 quarts (4 pint jars) so there is plenty to share and will keep several weeks in the refrigerator. You can also make a smaller batch, vary the vegetables, adding more or less of your favorites, cutting them larger for antipasto or smaller to use as a condiment or relish.
Homemade Giardiniera, recipe adapted from Allrecipes
Ingredients
2 green bell peppers, diced (I used 1)
2 red bell peppers, diced (I used 1 red and 1 yellow)
4 – 8 fresh serrano peppers, sliced, depending on desired heat level
1 celery stalk, diced
1 medium carrot, diced
1 small onion, chopped
1 /2 cup cauliflower florets (I used 1 cup)
1/2 cup pickling or kosher salt
2 garlic cloves, minced
1 tbsp. dried oregano (I used Italian seasoning)
1 (5 oz.) jar pimiento stuffed green olives, drained and chopped
1 tsp. red pepper flakes
1/2 tsp. black pepper
1 cup white vinegar
1 cup olive or canola oil (I used extra light olive oil)
Directions:
Place the peppers, celery, carrots, onion, and cauliflower in a large bowl. Mix salt with 2 cups cold water, stirring until dissolved. Pour salt water in bowl over vegetables and top off with additional cold water until vegetables are covered; stir. Place plastic wrap over the bowl and refrigerate overnight.
The next day, drain water and rinse vegetables thoroughly to remove excess salt. Whisk together garlic, oregano, red pepper flakes and black pepper, oil and vinegar. Combine rinsed vegetables with chopped olives in non-reactive bowl and pour vinegar/oil mixture over and cover. Allow to marinate in refrigerator for 48 hours, stirring occasionally. Divide mixture into jars with seasoned oil/vinegar. Sealed jars will keep in refrigerator for several weeks and become more flavorful the longer it sits.
Homemade Giardiniera
Ingredients
- 2 green bell peppers diced (I used 1)
- 2 red bell peppers diced (I used 1 red and 1 yellow)
- 4 - 8 fresh serrano peppers sliced, depending on desired heat level
- 1 celery stalk diced
- 1 medium carrot diced
- 1 small onion chopped
- ½ cup cauliflower florets I used 1 cup
- ½ cup pickling or kosher salt
- 2 garlic cloves minced
- 1 tbsp. dried oregano I used Italian seasoning
- 1 tsp. red pepper flakes
- ½ tsp. black pepper
- 1 5 oz. jar pimiento stuffed green olives, drained and chopped
- 1 cup white vinegar
- 1 cup *olive or canola oil I used extra light olive oil
Instructions
- Place peppers, celery, carrots, onion, and cauliflower in a large bowl. Mix the salt with 2 cups cold water, stirring until dissolved. Pour salt water in bowl, adding additional cold water until vegetables are covered; stir. Place plastic wrap over the bowl and refrigerate overnight.
- The next day, drain water and rinse vegetables thoroughly to remove excess salt.
- Whisk together garlic, oregano, red pepper flakes and black pepper, oil and vinegar. Combine rinsed vegetables with chopped olives in non-reactive bowl and pour vinegar/oil mixture over and cover.
- Allow to marinate in refrigerator for 48 hours, stirring occasionally. Divide mixture into clean jars with seasoned oil/vinegar. Jars will keep in refrigerator for several weeks.
Notes
- Enjoy this homemade Giardiniera as a condiment on sandwiches, antipasto platters, pasta salads or even pizza topping. Brined overnight and then marinated for 48 hours, this recipe makes approximately 2 quarts (4 pint jars) so there is plenty to share and will keep several weeks in the refrigerator. You can make it mild or hot according to your taste and heat tolerance. In Chicago, it’s usually hot and enjoyed as a topping on Italian beef sandwiches. In the South, a milder version of giardiniera is used for the olive salad in the Muffuletta sandwich in New Orleans.
- *Olive oil will solidify and turn cloudy when refrigerated but will liquefy again at room temperature. Use canola oil to avoid the oil solidifying.
- Adjust this vegetable/pepper medley to your taste, with more carrot and olives, adding zucchini, fennel, or sweet banana peppers. Enjoy it on a hot dog or bratwurst, in pasta salad, as a pizza topping, on a sub or muffuletta sandwich or eat it straight from the jar.
- Sealed jars will keep in refrigerator for several weeks and get more flavorful the longer it sits.
You adjust this vegetable/pepper medley how you like, with more carrot and olives, adding zucchini, fennel, or sweet banana peppers. Enjoy it on a hot dog or bratwurst, in pasta salad, as a pizza topping, on a sub or Muffuletta sandwich or eat it straight from the jar.
Giardinera is great addition to Muffaletta Pasta Salad
or Muffuletta Dip.
Either are a great way to enjoy a taste of the Big Easy inspired by the quintessential New Orleans sandwich to celebrate Mardi Gras!

Have sorted my Mother’s button collection and would love these jars to display the buttons and the memories!
I love the new Ball jars. I seen the jars on their web site they also have a swirled jar that is new. So glad they are now in the stores as I don’t do any on line shopping. Have a great day Mary and give your fur babies hugs.
Love the pasta salad recipe! I follow you on Facebook.
Besides holding my garden flowers, I really would love to organize my button collection!
White buttons in one jar ect
I would use mine for flowers and storage of beans and grains. Might try this recipe also…Thank you and have a great day!!!
Can’t wait to try the Muffaletta dip!
And thank you for highligniting the Feed America program. We have a program in VA that distributes extra meat from hunters. People don’t realize how many in their neighborhoods can’t afford enough food…many of them elderly. Your mention of Feed America will bring meals to some of these people–thank you for caring!
I look at your photos, and they make me so happy. You have such an eye for display, and all your photos look so – well, to use the “new” word out they – hygge!!
Thank you for all the work you do to bring inspiration and beauty to your followers!
Thanks for doing this giveaway. I would use the jars for storage – maybe in my kitchen / maybe in my sewing room. So many possibilities for them!

What a wonderful giveaway opportunity! I would definitely use the jars to can that recipe of giardiniera! Thank you for all your wonderful ideas! And, of course, I follow you on Facebook and pinned the recipe!
I am always looking for different ways to display flowers. The jars would provide small receptacles to place all over the house. I will be sharing on FB also. New Orleans is our favorite city to visit. Have had the original Muffaletta from Central Grocery. Delish! Will put these recipes in my file.
Would use these on my granddaughter’s wedding table to hold flowers.
I would use the new style mason jars to “show off” my fresh canned garden tomatoes!
I have been a ball jar fan for years and years. I love that they are so versitle. A couple of years ago when you posted at different times about the colors that Ball had out, I immediately bought the purple ones and the blue ones (my fav colors). I have shared them with family and friends. I like to use Ball jars for storing food and other items as well as using as a vase for flowers. I love these newbies in the canning jar family. I especially like their unique shape. I would use them for storage and flowers!
Have a great weekend. ( I also follow you on Facebook)

I love giardinera. Thanks for the recipes. I can think of dozens of ways to use these jars but I think I would display them with potpourri.
I usually buy Giardinera, but after looking at your recipe, I believe I’ll make it myself! Packing it in those jars would make nice little gifts for my family when I have an abundance of peppers from my garden. The pasta salad looks divine also!
Love the new look of these jars. If I win a set of these jars, I would use them for flowers and as a holder for flatware when I am entertaining. I follow you on Facebook and Pinterest and by email. I pinned the giveaway (https://www.pinterest.com/pin/253397916514781130/) and shared on Facebook! Keeping my fingers crossed–my birthday is March 9, so it would be a neat early birthday present! Have a great day!
Would fill these jars up with something tasty and give to my neighbors for Easter! I love ball jars too, i have some of my grandmothers and use them all the time!

I made this recipe with a few substitutions and a little bit of sugar. Yummy, I may share with co-workers if there is any left!
I bet the sugar addition was great!
This recipe seems Weight Watcher friendly – think I’ll make it soon. I would use the sharing jars for flower displays.
As always, a beautiful and creative post! I would use the jars for flowers. Enjoy taking small bouquets to shut-ins and those who are ill.
Thank you for the continuing inspiration!
I love the new look and the charitable donation I think I would keep one set for flowers, and pretty storage for my paint brushes in my studio. I’d give the other set to my sister who does can and makes the best family recipe for bread and butter pickles.
The jars are perfect for flowers to be put in so many places around the house. . . adds a bright spot in the Spring. . .a little cheer for all.
Love the new look of the jars, these would have to be on display with flowers or crafts, certainly someplace they could be shown off or as gifts. I have plenty of the original standard jars for canning and jelly. Lovely post!
I would use the Bell jars for crafting storage. I always seem to have more supplies than places to store them! :-)
I would use the jars for displaying seashells, sea glass and for flowers.
Your Italian salad is certainly colorful. Welcome Spring!!
The giardinera looks so colorful and so easy, too. Those new ball jars are shaped so uniquely, aren’t they? I would use them for canning and for flowers, but I love them as a holder for your flatware!
Fabulous jars! I’d love to enjoy them filled with my cut flowers from my garden and they’d be a perfect gift filled with flowers for a friend.
I would use some of the jars to make a spring centerpiece in a wooden crate and I would use the other ones for canning or food gifts. I am a subscriber to your blog, as well as follow you on Pinterest and I pinned about the giveaway, as well as the recipe. Can’t wait to try it! Happy Weekend…… :)
I love Giardinera … it’s so pretty, too. thanks for the recipe and I must try the Muffaletta Pasta Salad … bet it is good with King Kake….!!!!!!!!!!!!!
Love the new look of these jars. I tried your Muffaletta Salad last weekend and it was a hit with my family. I think I will make it again and share with girlfriends when we meet and put it in these cute jars with a little raffia or ribbon. So cute!
The pictures of the giardinera are like eye candy. The colors are absolutely stunning. I am a great fan of ball jars, and use them almost everyday in a multitude of ways. Storage, flowers, collections, canning etc. My most frequent use is for my lunch. I usually make a few meals ahead of time and place in the jars. I freeze some right in the jar, and the others wait in the refrigerator for me to grab for my lunch at work. I recently made your sausage, butternut squash chili. Soo yummy. Will share on fb
Piinned!
Love your recipe! I am going to try it as my husband loves this stuff! He can eat an entire jar at one sitting.
I would use the jars for flowers and this recipe, of course!
I am definitely going to use the jars for flowers. The jars are beautiful and one would look lovely on my coffee bar holding spoons. I can not wait to make this recipe as well!
You have such a talent, those veggies make me ready for garden season. I follow on fb and I shared it. Always look forward to your blog post. Lena
I would use them for flowers, also for flatware display. They’re so cute! Thank you for this giveaway and the great displays – you never fail to inspire.
I would probably use them for flowers and storage. Thanks!
Oh the yumminess and beauty! I love the silverware in them. I want to try with what I have 😉
I would use the new Ball sharing jars for card parties that I host for my 83 year old Mom and her friends. Their ages range from 83 to 94 and they are still Playing Cards!!! It always excites them when I have something new that they have not seen! I usually have a small gift for them, so the jars would be a great re-gift with flowers and a place card in the jars at each place setting. I serve them lunch before they play cards in my 3500square foot “She Shed” that is 5 minutes away from my home. I am so blessed to be able to share my beautiful 97 year old Craftsman “She Shed” with my friends and family. I follow your blog and also follow you on Pinterest. I use a lot of your ideas at my parties! Thanks for all your beautiful posts~they make my day :)
I would use the jars for canning the bounty from our garden. However, I use them all around the house for storage of buttons, jewelry making supplies, flatware and flowers! Great photos and recipes Mary!
Since my Joe makes the giardiniara, he would LOVE to have these to put it in! So, I would give them to him! We first tasted it down in Fl. at a friends house so he asked for the recipe to make it himself.
Probably canning and flowers. I love the new shape. Thanks for sharing.
I love your posts, they are so colorful and always give me ideas for my own home and garden. I love the jars but the cost of shipping them is as much as the jars. I made a donation to Feeding America directly instead. It’s a very highly rated charity and one that I feel good in supporting. Thanks again for the lovely posts.
mmmmm, nothing like a picnic at Audubon Park complete with Muffalettas from Central Grocery, we love their olive salad! i like the new look on the ball jars, I would use them in our picnic basket for bringing along side dishes, keeping snacks, or for beverages! I always enjoy seeing posts about your potting shed!! Thank you for the opportunity. I follow on FB & Pintrest I will share, and I’m subscribed to your blog.
I would love to win a set of the new jars! I also can’t wait to try this recipe!! It looks so yummy!

I would try the Giardinera!
Love the jars, following….
Thanks
I love these new jars. I’d use them for all of the things you mentioned. I’d use them as glasses for a dinner party with a cute bow around the top and some pretty paper straws to sip through. Then I’d use one to hold pens on my craft table, and use them for food storage and for flowers when I have fresh flowers available. I might also give one away, although it would be hard to part with it! I have used the Quatro jars you introduced me to for gifts filling them with candy or craft supplies. Thanks so much for always finding these great new products. This is the first I’ve seen these and will definitely have to buy some even if I win a set.
I subscribe by WordPress
I am also a subscriber to your blog by e-mail and FB, and I’m sharing this on pintereset.

I have seen Giardinera but did not know it’s name. It is so colorful and appealing. I know it is delicious since all the ingredients are. Your presentation is very appetizing.
Flowers are so pretty in your post today with your tole tray in the background. Charming vignette.
I was excited to win Shirley’s giveaway of She Sheds. It just arrived and I can’t wait to start reading.
Beautiful post, as usual!
I didn’t know about this new jar shape – it would be the perfect size for my “get well soon” Rx sugar cookies shaped and decorated like pills, with the prescription directions: “take one as needed”.
I am a subscriber. Love these jars.
I shared the giveaway on Facebook
I buy giardiniera all the time. My husband eats it straight from the jar! Your recipe is on my to-do list for this weekend. I’m hoping that the next time I try it I’ll have the jars.
Thank you so much for your delicious recipe. And your pics are always so spectacular!!!!
As for the new Ball Jars – and this idea of feeding the hungry – how awesome is THAT????? I need to look into that – I would very much like to do my part, too. And I love their new shape!
As for your wonderful and generous giveaway, thank you so much! I’d be delighted beyond words to win!
I’d use the winning jars to store. I recently re-did my walk-in pantry (I bake often) and would use one for baking soda, one for baking powder, one for both kinds of brown sugar I think? If I ever re-organize my craft space they’d be great for that, too. Or to store nuts for baking. My husband uses clean used food jars so he doesn’t get these pretties, haha, but it’s be nice if he had some that look so nice so maybe for him, too, if I am feeling generous. ♥
Thanks again! (I’m a subscriber, of course.)
By the way, I’m delighted buying the Ball Sharing Jars benefits Feeding America. I’ll be looking for these in the store. I use Ball jars all the time for so many things.
Ohhh, those are pretty! Pretty jars are in constant rotation here…sometimes for flowers…sometimes for the jams that I make from our lovely local berries!

I would use the jars for our food pantry at church. We have several families that shop regularly for food that our church members donate. I would fill them with non-perishables and give them to our pantry. Not only would some families benefit from the donated food, but they would also have some beautiful glass jars to reuse again! Thank you for doing this!

The new Ball jars are fantastic! The versatility of them offers many creative ideas to bloom! I would love to use them as special favors for each place setting at my family Easter dinner. Tucked inside you will find chocolate candies, a bunny cookie, all on top of edible Easter grass. A precious tag with an Easter Bible verse would be entwined around the top in a pretty bow with a faux posey.
Thanks for the info regarding new jars and the recipe. I LOVE the new shape. Will look great for craft storage and flowers.
Have a great weekend!!
Love the Sharing Jars. What a perfect jar to use for May Day bouguets for your neighbors!
I have not seen these new jars! I was just in Target perusing the jars too; they must be a bit behind. I love the groove around the top for a bow or label and the beveled shape. It’s a good thing that there are more than two in the package because they would be hard to part with. Plus they are wide-mouth it looks like, which is always best.
I grew up in New Orleans and I haven’t made a muffuletta sandwich in a long time. When I was a kid my mother’s maid used to make the pickled salad (yes, in that very politically incorrect time) and I would pick out the cauliflower bits because I was just a very odd kid.

I love that Ball is supporting hunger relief, and I love collecting Ball jars, The green & blue ones are my favorite! We used many of them, along with clear, smaller sized Ball jars scattered thru-out the house for my daughter’s graduation party. My mother is so awesome, she brought all sorts of beautiful flowers trimmings from her garden for display in the jars. I also love to use them for storage. One can never have too many jars! A beautiful, colorful post, Mary! Thanks!

Planning on making the Giardinera and giving as gifts . Of course I frequently make homemade gifts or food items and always place them in a variety of sizes and shapes of ball jars. The always make a lovely presentation and something that can easily be personalized.
I so enjoy your posts and love your ideas as well as comments from other readers. I would use these jars as hostess gifts, filled with flowers from my garden or homemade treats. I might have to fill them with Peeps as well!.
Love the new shape of these Ball jars. I need them for sewing room storage and for sharing food with neighbors who have little ones and not much time to cook!
Love to use them as flower vases, to hold coconut oil for lotions, to include as a homemade salad dressing container when making dinner for others, the possibilities are endless….!
I would use the new jars for a batch of the giardenera. The angles of the jars make it look like jewels . Then also I enjoy using canning jars for storing dry goods in the pantry. I also like to store embroidery floss, buttons, ribbons, thread bobbins and even spools of thread in on shelves in my sewing room.
I like the old time look.
Mary,
Love the new Bar jars too! And for the gentle nudge to remember to contribute to the “Feed America Program”. Much to be grateful for and the opportunity to give to others in need.
These photo’s and recipes are so inspiring! Plus your give-a-ways.
Last but certainly not the least….. thank you for your generous spirit and for sharing your time and talents with all of us!
The shapes of the jars are what is so unique about them. I’d use for flowers and to hold my paintbrushes. Like them with your silverware in them too so might put extra spoons in them for my coffee station. Great giveaway!
I just shared on pinterest! https://www.pinterest.com/pin/37858453098176029
I love canning and preserving. Next thing I do will be strawberry jelly and strawberry syrup. Thanks for the chance to win.
